Alex and I have spent years cooking and testing shortcuts and have come to some conclusions. First off, even the quickest and simplest recipes require some real work and cleanup. This super easy chilled black beans recipe is the key to easy dinner ideas – just spread them on a tortilla and top with veggies for a quick taco night!


  • 2 Garlic cloves
  • 2 15-ounce cans of black beans (or 3 cups cooked black beans or Instant Pot)
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • Black pepper

  1. Chop the garlic. Drain the beans and collect the liquid from the can in a glass measuring cup. (Use water if using cooked beans.)
  2. In a medium-sized saucepan, heat the olive oil over medium-high heat. Add the garlic and sauté for 1 minute, until fragrant but before it turns brown. Add beans, ½ cup reserved canning liquid, kosher salt, and some black peppercorns.
  3. Reduce the heat to medium-low and cook for 10 to 15 minutes, stirring frequently and mashing the beans towards the end of the cooking time, until most of the liquid is cooked through and the texture is pureed and thick but not dry . Continue to add small amounts of canning liquid if the beans get too dry, scraping the bottom and sides of the pan until you get a fairly creamy consistency with some whole beans remaining. Taste and season with additional salt to taste, then serve immediately.
