When I saw this Red Cabbage and Apples recipe in a list of ideas for a vegetarian cooking class, I knew I had to try it. This classic cabbage recipe seemed like a perfect warming recipe for fall and winter. As expected, it turned out delicious! The slightly sweet and vinegary flavor makes this dish a great accompaniment to many savory options; it almost reminded us of a chutney! The cumin added the perfect flavor essence, with a subtle rye bread vibe. Here’s how to make this healthy and delicious side dish.

This cabbage and apple recipe is packed with healthy ingredients. Red cabbage is rich in vitamin C, which strengthens the immune system (very important in the cold season). It also contains phytonutrients that can help fight inflammation and fight arthritis. Not to mention its high content of vitamin K, an essential part of any diet. The other main ingredient in this recipe, the apple, is high in fiber and antioxidants.

If you don’t have a mandolin or grater, you can also thinly slice the red cabbage by hand. It may need to stay in the oven a little longer depending on the size of the slices, but the flavor is still delicious. Just be sure to buy a red cabbage and don’t substitute a green one. The flavor will be a little less rich if you use kale, and the color won’t be as good halfway through.

Choose the apples to throw in this dish. Sweet apples like Gala and Honeycrisp pair well with the savory vinegar, but really any apple complements the earthy red cabbage. And while Alex and I are always in favor of eating as much skin as possible, we made an exception with this recipe. It really helps to peel the apples beforehand, otherwise you’ll end up with tough apple skin with every bite.

Serve this cabbage and apple recipe right away or enjoy it cold later (in fact, I like it better cold). It would pair well with a hearty bowl of cereal or with roast potatoes. Any main course you enjoy during the cooler months will be enhanced with a pile of cabbage and apples on the side!

The slightly sweet vinegar flavor of this cabbage and apple recipe makes it the perfect accompaniment to a variety of fall and winter dishes.


  • 1 head of red cabbage
  • 1 yellow onion
  • 3 apples
  • 3 Garlic cloves
  • 1 tbsp olive oil
  • 4 tablespoons Apple Cider Vinegar
  • 4 tablespoons red wine vinegar
  • ½ cup cider
  • 1 a few drops of port wine or sherry (optional)
  • 2 tablespoons Caraway seeds
  • Kosher salt and freshly ground black pepper

  1. Grate the cabbage (see video tutorial!). Finely chop the onion. Peel the apples and cut into thin slices. Chop the garlic.
  2. In a Dutch oven or large saucepan, heat the olive oil over medium-high heat. Sauté the onion for about 5 minutes until soft.
  3. Add the cabbage, apples, garlic, apple cider vinegar, red wine vinegar, apple cider vinegar, port or sherry (optional), cumin, and a little salt and pepper. Cover and cook over low heat until cabbage is tender, about 15 to 20 minutes.
  4. Let cool slightly and season with additional salt and pepper.
