Here’s a bubbly, refreshing drink that’s perfect for entertaining… or whenever you need a treat. try it Rickey Raspberry Lime! It’s part of a family of mocktails called Rickey, a highball drink made with soda water and lime juice. It was first invented with gin but has become a popular mocktail because the flavors work so well together. Add sweet raspberry syrup to a lime rickey and you have a new improved version! The berry and lime formula has the perfect tart flavor and bubbly texture. We’re 100% obsessed with this one (and Rickey Lime Cherry, too).

What is a Raspberry Lime Rickey?

Rickey has a long history as a drink! It was first invented in the 1890s as Gin Rickey and made from gin, soda water and lime juice. (Well, technically it started with bourbon in the 1880s!) The drink became popular around the world and was even featured in books like the 1920s novel. Gatsby the Magnificent. The Lime Rickey is a non-alcoholic spin that loses the gin, although some people put gin in every Rickey recipe (including us!).

Anyway, it’s delicious! We like to do a mocktail as a kids cocktail for our 4 year old and then the gin version for us. Here’s what you need:

  • Fresh Lime Juice
  • raspberry syrup
  • Carbonated water
  • gin (optional)
  • Fresh raspberries and lime wedgesfor garnish

What is sparkling water? Is it the same as tonic water?

mineral water is not the same as tonic water: and essential for a wanker! Here is the difference between the two:

  • Carbonated water, also known as sparkling water or seltzer water, is carbonated water with no additives (just choose as sometimes flavorings or sugar can be added). We use our SodaStream to make carbonated water for drinks and just for drinking.
  • tonic water is carbonated water with added quinine and sugar. This gives this drink a noticeably different flavor as it is sweeter with a bitter finish.

Tips for making a Raspberry Lime Rickey

Raspberry Lime Rickey is as easy as it gets! Like many highball cocktails, you can pour it straight into the glass: no shaker required. It’s as simple as mixing lime juice and syrup and topping it up with sparkling water. But how do you really stand out?

  • Use clear ice. Clear Ice is artisanal, crystal clear ice that you can make at home and cut into large blocks. It looks like a drink from a fancy bar! It also chills the drink and makes it
  • Don’t skimp on the toppings. The fun part of this drink is having at least 3 maraschino cherries in your glass.
  • Add a festive straw if you like! We used these striped paper straws.

  • 1 ounce (2 tablespoons) fresh lime juice
  • ½ ounce Raspberry syrup (bought or homemade*)
  • For a cocktail: 2 ounces gin (optional)
  • 4 oz (½ cup) Carbonated water
  • To Serve: Ice (try clear ice), lime wedges, fresh raspberries

  1. Pour the lime juice, optional gin and syrup into a highball glass and stir.
  2. Top up with ice and top up with sparkling water. Garnish with lime wedges and fresh raspberries.

Remarks

*You can find cherry syrup at most liquor stores, grocery stores near the liquor store, or online. This homemade raspberry syrup is perfect for cocktails and easy to make.
