Fry it in olive oil and the skin gets nice and crispy (in fact, we couldn’t stop nibbling on the skin). This quick meal appeals to almost everyone, including people who are reluctant to eat fish. Pair it with some quick side dishes for an easy dinner party; We made this casserole for the family and it was gone in no time.

Bake the first side until golden brown around the edges and almost done (with just a little pink streak at the top). After flipping, it takes about 30 seconds to finish cooking.   • 1 pound rainbow trout fillets
  • 1 teaspoon kosher salt
  • Freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 tbsp chopped fresh rosemary, plus 1 tsp for garnish
  • Lemon wedges for garnish

  1. Pat the trout fillets dry with kitchen paper and season both sides with salt and pepper (skin side and meat side).
  2. In a large skillet, heat the olive oil and rosemary over medium-high heat until oil is shimmering, about 1 minute.
  3. Add the trout, skin-side down, and cook until browned around the edges and almost cooked through (with just a small pink streak on top), 4-5 minutes. Flip the fish and cook until just cooked through, about 20-30 seconds. Remove from the pan and serve immediately, drizzle with the juice of the lemon slices.
