You can never have enough taco recipes, right? Here, tacos are one of our favorite weeknight foods because they’re so easy and versatile. We’ve made tacos with just about everything from lentils to scrambled eggs. Today we have a phenomenal taco mattress topper: radish salsa! It comes together in minutes and adds great flavor to all of your favorite taco recipes. Here he completes a quick black bean taco recipe that is an incredibly delicious quick meal!

How to make radish salsa

Alex and I just picked our first radishes the other day, and I stumbled across a recipe for fish tacos that are served with a flavorful radish salad. Which got us thinking… you can make radishes salsa? We couldn’t resist trying it for dinner with our friend Annie. She was more than happy to try a new twist on tacos and we were thrilled with the results.

Spicy Radish Salsa is a refreshing and unique flavor that goes well with black beans and feta. It came together quickly and was a delicious way to share a meal together. How do you make a radish salsa? It’s very easy. Here are the main steps (see recipe below for more):

  • Thinly slice and quarter the radishes. Cut the spring onions into thin slices. Chop the cilantro.
  • Deseed and dice the jalapeño pepper. You can use as much pepper as you like: half for a mild salsa, or more for a spicier twist.
  • In a bowl, toss together the cilantro, radishes, spring onions, jalapeño pepper, lime juice, olive oil, kosher salt, and freshly ground black pepper.

Serve within 10 minutes or mix up right before serving!

That’s it! Note that the radish salsa can become watery as it sits, so it’s best to serve for about 10 minutes to mix. When serving the salsa, use a slotted spoon to strain out excess liquid.) Or you can chop all the ingredients up the day before and refrigerate: then add the lime juice and olive oil before serving.

Serve with black bean tacos

These black bean tacos use a riff on our favorite way to prepare black beans. The trick is to use the liquid from the can of black beans to create a creamy sauce to coat the beans with! First, sauté some chopped garlic in olive oil for a few minutes, then add the black beans and the liquid with a few sprigs of coriander.

All you have to do is simmer for 15 minutes until the liquid condenses. What a result is a pot of very tasty black beans! We’ve used this method for years, starting with this Black Bean Tofu Scramble and most recently in our Quick Beans and Eggs.

Combine these black beans with the radish salsa and some feta cheese and you have a delicious black bean taco! And our final tip for next-level tacos: toast the tortillas! Place over an open flame over medium-high heat for a few seconds on each side, turning with tongs until lightly charred and warmed through. This not only heats the tortilla, but also gives it an irresistible flavor.

For the radish salsa

  • 1 Bunch of radishes (approx. 12 Radish)
  • 4 Green Onions
  • ½ at 1 Jalapeno chilli
  • 3 tablespoons chopped coriander
  • 4 tablespoons lime juice (approx. 2 Lemons)
  • 1½ tablespoons olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

For the black bean tacos

  • 2 tablespoons olive oil
  • 1 clove of garlic
  • 1 15 ounces black beans (or 1 ½ cups cooked)
  • ¼ teaspoon kosher salt
  • Shredded coriander leaves for serving
  • ¼ teaspoon freshly ground black pepper
  • 12 small corn tortillas
  • ¾ cup crumbled feta cheese

  1. For the radish salsa: Thinly slice and quarter the radishes. Cut the spring onions into thin slices. Deseed and dice the jalapeño pepper (making sure the juice is not visible). Use ½ pepper for a mild salsa and more for a spicier twist. Chop the cilantro. Toss the cilantro with the radishes, spring onions, jalapeño pepper, lime juice, olive oil, kosher salt, and freshly ground black pepper. (*Note: radish salsa can become watery while sitting, so it’s best served about 10 minutes after preparation. When serving the salsa, use a slotted spoon to strain off excess liquid.)
  2. For the black beans: Chop the garlic. In a medium-sized saucepan, heat 2 tablespoons olive oil. Add the garlic and sauté until the garlic is fragrant and just beginning to brown, 1-2 minutes. Add the black beans with the liquid from the can (add ¼ cup water if using beans without liquid), several sprigs of cilantro, and ¼ teaspoon kosher salt. Bring to a boil, then simmer for 15 minutes until liquid condenses.
  3. Grill tortillas: Char the tortillas, if desired, by placing them over an open gas flame over medium-high heat for a few seconds on each side, turning with tongs until lightly charred and warmed through. (See Reheating Tortillas.)
  4. To serve, place the beans in the center of a tortilla, top with radish salsa, crumbled feta cheese, and cilantro.
