It probably goes without saying. But if you’ve ever bought an out-of-season tomato from the grocery store, you know what happens. They’re pink, floury and tangy: not at all what you’d expect from a good tomato!

Use only the best, fresh, ripe tomatoes for this tomato vinaigrette. Summer tomatoes are best, especially if you can find them at a farmer’s market or in your garden. Another option is hydroponic tomatoes sold at the grocery store: these are tomatoes grown in a greenhouse using water instead of soil. In general, these tomatoes have a better flavor than the standard off-season tomato.

Ingredients for the tomato vinaigrette

Once you promise to use a ripe tomato, this recipe doesn’t need much more! Place the following ingredients in a blender and blend until smooth:

  • tomato
  • Extra virgin olive oil
  • white wine vinegar
  • Dijon mustard
  • Salt

You should remove the seeds from the tomato. But skip those lovely seeds: they add a lot of flavor!

Can you substitute cherry tomatoes?

Do you only have cherry tomatoes on hand? You can also use them for the tomato vinaigrette! We only did this with one large tomato, but cherry or grape tomatoes should work well too. Just measure ½ cup chopped. Note that the taste will be slightly different due to the different character of this tomato variety.

This tomato vinaigrette mixes quickly and comes out tangy and creamy! This is a perfect use for fresh ripe tomatoes.


  • 1 small or ½ medium tomato (4 oz), about ½ cup roughly chopped
  • ½ cup Extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • 1/4 at 1/2 teaspoon of kosher salt

  1. Roughly chop the tomato, remove the white core but keep the seeds. Place in a blender along with olive oil, white wine vinegar, Dijon mustard, and ¼ teaspoon kosher salt.
  2. Blend until creamy. Taste and add up to another ¼ teaspoon kosher salt. Store in the refrigerator for up to 1 week.
