We went back to the drawing board and created this “cheater’s” quick pizza dough in a food processor! It’s a little crumblier than our best batter ever, but overall it’s surprisingly good for the time it takes to whip! This is our quick option for busy weeknights. Ready for a quick pizza dough? How to make quick pizza dough

While pizza is always worth it, we worked to minimize the amount of time and effort involved with this quick pizza dough recipe. With this method, the food processor method does all the kneading for you! As long as you add the water slowly and don’t over knead the dough, your pizza will turn out great. The only special step with this quick pizza dough is weighing out the flour. You can certainly measure flour in cups, but the weight can vary slightly if you don’t measure exactly right. It just means you have to adjust the amount of water you add (it can be a little more or a little less than the recipe calls for).

Pizza dough takes some practice, so the crust may not be perfect the first time. There’s nothing special about the ingredients or technique of this quick pizza dough. How to Freeze Quick Pizza Dough

This quick pizza dough is best the day it’s made. However, if you decide not to use either ball of dough, you can freeze it for later. Simply place each ball of dough in a ziplock bag and place in the freezer. The morning you use the dough, take it out of the freezer and place it in the fridge to thaw. About 30 minutes before cooking, remove the pizza from the bag and leave it on the counter covered with plastic wrap. The dough should be room temperature when you start stretching; if it’s too cold, it becomes difficult to work with and may not cook evenly.

If you have leftover real pizza, it’s easier to refrigerate, although you’ll find the flavor fades a bit over time. You can pop the chilled pizza slices straight into a hot oven or toaster until piping hot, then add a little more kosher salt if needed. You can also reheat them in a covered pan on the stovetop with a few drops of water to moisten the crust: this is our favorite way to reheat pizza because it tenderizes the crust and melts the cheese perfectly!

This quick pizza dough recipe in a food processor recipe will have pizza on your table in under 45 minutes. This speed is unbeatable for homemade pizza dough.


  • 300 grams All-purpose flour or Tipo 00 (2 cups)
  • 2 teaspoons instant yeast (1 Package)
  • ½ teaspoon kosher salt
  • 1 tbsp olive oil
  • ¾ cup + 1 tbsp Hot water

  1. In a food processor, mix flour, baking powder, salt and olive oil.
  2. With the food processor on, slowly (I mean slowly, about 30+ seconds) begin to pour in the lukewarm water. Stop adding water when the dough forms a single ball. If you add too much water and the dough gets sticky, just add a little more flour.
  3. Leave the food processor on for about 10 more seconds to knead the dough a bit.
  4. Place the dough on a lightly floured work surface and knead a few times until smooth.
  5. Divide the dough into 2 equal pieces. With floured hands, gently form each half into a ball (spherical shape) by folding the dough over itself. Place each ball on a floured work surface and brush the dough with a little olive oil to keep it moist. Cover the bowls with a towel or inverted bowls and let sit for 30 minutes.
  6. To stretch the dough, place it on a lightly floured surface and gently press in circles, turning several times and adding a pinch of flour if too sticky. Once you have a circle of about 8 inches, take the dough and gently drape it over the knuckles of both your hands. Twist it slowly and allow gravity to stretch it into a circle about 11 inches in diameter. Do not overwork or fold the dough. When the dough stops stretching, lay it down and let it rest for a few minutes, after which it will stretch more easily.
  7. We bake our pizzas at 500F and use a pizza peel to transfer them to a preheated pizza stone in the oven: Baking time is around 5-7 minutes. Check out our pizza recipe posts for cooking instructions.
