There’s something liberating about cooking with just the ingredients you’ve found rummaging through your pantry and fridge. It brings out the inner hacked competitor in all of us! Most of the time, our impromptu weekday cooking consists of something with eggs, beans, or both. Here’s the easiest way to cook dinner in a hurry we’ve found: this one seriously quick eggs and beans. How to make the fastest eggs and beans

These simple eggs and beans are downright unglamorous. But why not share the quick, down-to-earth meals that Alex and I eat? At a time when Instagram-perfect meals have taken over our feeds, It’s good to remember that real food can be impromptu and simple.

That said, for two sloppy stacks, these quick eggs and beans look pretty served with tomato, avocado, and cilantro confetti. Beans are our favorite easy method: cooked with a little of their canning liquid and a little cumin and coriander. They’re served with our standard soft scrambled eggs, fluffy treats with some bold cheese for a bit of flair. We can make this egg and bean recipe in 20 minutes or less and mostly without thinking, making it a perfect meal for weekday hunger pangs.

These Easy Eggs and Beans are a quick and easy dinner idea and the answer to getting a quick dinner on the table… in just 20 minutes!


  • 1 clove of garlic
  • 2 tablespoons olive oil
  • 15– ounce can of black beans (or 1 ½ cups cooked black beans or Instant Pot)
  • 1 a handful of coriander
  • ½ teaspoon cumin
  • ¾ teaspoon kosher salt, shared
  • 4 eggs
  • ¼ cup shredded sharp cheddar cheese (or any other tasty cheese)
  • 1 tbsp butter
  • Cherry tomatoes for serving

  1. Chop the garlic. In a medium saucepan over medium heat, heat 2 tablespoons olive oil. Add the garlic and cook until just fragrant, about 30 seconds. Lower the heat. Add the black beans along with their liquid (or ½ cup water if using cooked beans), 4 sprigs of coriander, ½ tsp cumin, and ½ tsp kosher salt. Bring to a boil, then simmer for 15 minutes until liquid condenses.
  2. In a medium bowl, crack 4 eggs and whisk well. Stir in ¼ cup grated cheese, ¼ teaspoon kosher salt, and plenty of freshly ground pepper. In a skillet, heat 1 tablespoon butter over medium-high heat. Tilt the pan to make sure the entire pan is covered in melted butter. Pour the eggs.
  3. Keep the heat medium. If the eggs are just beginning to set, use a flat spatula to slowly scrape parts of the eggs and create wrinkles. Scrape occasionally until eggs form soft folds and remove from heat just before they are fully hardened. Serve immediately with black beans, sliced ​​cherry tomatoes, and sliced ​​avocado, garnished with chopped cilantro.
