Here’s our new favorite cooking trick: this one quick chilli recipe! Yes, we dare say this recipe is lightning fast. In just 25 minutes you’ll have a quick and easy dinner recipe. 25 minutes! And most of the time is without intervention. All you have to do is cut an onion; otherwise throw and throw. Even better: the taste is fantastic! There’s nothing in it that tastes like a shortcut. We’ve done it many times, and every time we do it I think: Wow that was easy. This simple recipe will be a staple in our kitchens for years to come.

Ingredients for this quick chili recipe

In a world full of Chili iterations, is another even needed? Yes, we think. This is one of the quickest and easiest you’ll find: and it’s healthy with great flavor. After cooking, you might feel like a superhero (we did). How is it possible to get taste so quickly? Here are our secrets:

  • Onion: You can’t mask the real onion taste. It’s the only thing you need to get your knife dirty for, and it only takes a minute to blast.
  • Canned Roasted Tomatoes: These tomatoes are roasted over open heat before being canned. This gives them a sweet, developed flavor right out of the box. If you can’t find them, use the best quality tomatoes you can find.
  • Red beans : The best chili beans in our opinion: pinto beans! However, you can use any type of beans you like.
  • Chili powder, oregano, garlic powder, onion powder and cumin: A large hunk of spice does the heavy lifting in the flavor department.
  • Plant-based Vegetable Crumbles: Yes, you heard us right! Now you can use pure ground beef if you like. But this is the very first recipe already on this website that we used a vegan meat substitute. Are you wondering why?

What are the best vegan or vegan meat substitutes?

Alright, here’s the thing. In 10 years of writing a mostly vegetarian and vegan food blog, we’ve never used a vegan meat substitute in a recipe until this quick chili. Why? Well that sounds like a scam. But more importantly, the plant-based meat alternatives of 10 years ago were much more processed. There are better options on the market today that are more natural and less like processed foods.

Keep in mind that this food group isn’t always super virtuous. But you can find decent options these days. Here’s what to look for when trying to find the best vegan meat alternatives:

  • Look for a short list of ingredients and whole foods. Overall, the ingredient list should be relatively short and include foods you are familiar with. Of course, some ingredients are used as binders to hold everything together.
  • Consider dietary restrictions. Many vegan meat alternatives are similar to seitan, which is made with essential wheat gluten. Yes, a protein source consisting only of solid gluten! We don’t eat exclusively gluten-free, but prefer protein-rich meat alternatives, not all of which are gluten-free.
  • Experiment with the texture. We tried several different brands in this quick chili recipe. We preferred the Beyond Meat Crumbles: they’re made with pea protein and have a meat-like texture. Experiment to find a brand you like!

Use ground beef if you prefer a standard chili

Another revolutionary first: this is the first time we’ve mentioned ground beef as an option in a recipe! This mostly vegetarian food blog doesn’t usually talk about eating beef because we don’t eat much of it. But if you fancy a classic chili and beef is part of your diet: go for it! All you have to do is cook and drain 1 pound of ground beef. Then use it in place of crumbled veggies in this quick chili recipe.

Best Quick Chili Toppings

The best thing about a chili is of course all the toppings! Use the simmer time to assemble all your favorite toppings in this quick chili recipe. Here are some of our top picks, some standard and some more unique:

  1. Sour cream: An essential! Use vegan sour cream for a purely plant-based chili.
  2. Grated cheese: Use cheddar or Monterey Jack, or go funky with smoked Gouda.
  3. Green Onions: Add some greens with chopped green onions.
  4. Hot sauce: Naturally! A favorite is a Mexican hot sauce like cholula.
  5. Jalapenos or Pickled Onions: These pickled jalapeños add zest; pickled onions add pink color and savory flavor.
  6. Thinly sliced radishes: These vegetables add crunch.
  7. Chopped Coriander: The best way to add fresh flavor!
  8. tortilla strips: Make a batch of tortilla strips: or simply crumble tortilla chips on top.
  9. avocado says: Chopped avocado adds richness and makes it heartier.
  10. Roasted Salted Pepitas: This unique option adds a salty crunch.
