Here’s an idea for a quick dinner quiet satisfactory and works for almost every diet. It’s true, good old man Burrito bowl! We can thank Chipotle for its huge popularity, but it really is a killer idea. Throw rice, veggies, and burrito toppings in one bowl and call it a meal! Here’s the thing: It can take a while to make a good burrito bowl at home with all the components. You want a burrito bowl as fast as lightning MAKE? We have them. In fact, you can do this for 15 minutes (we took our time).

How to make a burrito bowl… fast!

The longest item in a burrito bowl is the rice. If you want to make a quick bowl, you need to reduce the rice cooking time. There are a few options:

  • The fastest: Use packaged pre-cooked rice! There are quite a few brands on the market (we used Seeds of Change)
  • Fast: Cook the rice the day before and then heat it on the stove with a little water
  • Average speed: Cook white rice on the stovetop in 20 minutes, or even better, make cilantro-lime rice
  • The longest : Cook brown rice on stovetop in 45 minutes (remember to do this ahead of time)

The other key to this quick burrito bowl? Our shortcut for black bean and corn salad! We discovered this trick and have been using it ever since. All you have to do is mix 3 ingredients together and you have a salad that tastes like you spent hours slicing it. The keys? Mix together:

  • 1 can of black beans
  • 1 can of corn
  • Bought 1 cup of pico de gallo: You can find it packaged in the refrigerated section of your local grocery store! It can be referred to as pico de gallo or fresh salsa. It’s an absolute lifesaver and adds a flavorful touch to any salad.

You can also use the black bean corn salad as a black bean salsa dip for fries or try it in our shrimp bowls.

Prepare the chipotle ranch dressing

When we set out to prepare this burrito bowl, we used pre-cooked packaged rice for maximum speed. So we had a lot of time to prepare this chipotle ranch dressing! It’s so delicious and easy to make. Here are the magic ingredients:

  • Yoghurt + Mayonnaise: Using yogurt with the mayo helps save calories but retains some of the richness of standard ranch dressing.
  • Spanish spice and marinade mix: They use the adobo sauce from a can of chipotle peppers. It’s usually easy to find this ingredient alongside Mexican ingredients at your grocery store. Only use the sauce from the can.

Want a milder version of this sauce, especially for kids? Just use half of the adobo sauce (1 tbsp). It won’t be spicy, but it will still have a great smoky flavor!

For the burrito bowl

For the chipotle ranch (use chipotle sauce for vegans)

  • ½ cup Whole milk yoghurt (or Greek yoghurt plus 1 tbsp the water)
  • ¼ cup mayonnaise
  • 1 teaspoon Apple Cider Vinegar
  • 1/2 every teaspoon every dried dill, garlic powder and onion powder
  • 1/4 every teaspoon every kosher salt and ground black pepper
  • 2 Adobo Sauce from a Can of Chipotle Peppers**

  1. Cook rice: Prepare stovetop white rice, stovetop brown rice, instant pot rice, or cilantro lime rice. Alternatively, you can buy a pre-cooked pack that cooks in 2 minutes (like the Seeds of Change brand). When the rice is cooked, fluff it up with a fork and add a few pinches of salt and a drizzle of olive oil to taste (don’t skip this step!).
  2. Prepare the black bean lamb’s lettuce: In a bowl, combine the beans (drained and rinsed), corn, and pico de gallo with the kosher salt.
  3. Cut vegetables: Cut the avocado. Halve the cherry tomatoes and finely chop the onions.
  4. How to make Chipotle Ranch: Combine all of the dressing ingredients in a small bowl until completely combined.
  5. Surcharge: Place the rice in the bowls, then top with the black bean and corn salad, greens, and chipotle ranch dressing.

Remarks

*You can find it packaged in the refrigerated section of your local grocery store: it may be labeled pico de gallo or fresh salsa. If you can’t find it, make homemade pico de gallo.

** Adjust to your heat level. For a mild version, use 1 tablespoon of adobo sauce.
