  • 1 supplies wild-caught salmon fillets with skin
  • Olive oil, for brushing
  • ½ teaspoon kosher salt, plus more for the brine
  • Freshly ground black pepper
  • Optional: lemon caper sauce for serving

  1. Salt salmon* (optional): In a shallow bowl, whisk together 4 cups room temperature water and 3 tablespoons Kosher salt until dissolved. Put the salmon in the water and wait 15 minutes.
  2. Preheat grill to high heat.
  3. Place a large piece of aluminum foil on a baking sheet and brush with olive oil. Pat each piece of salmon dry and place skin-side down on the foil. Brush the salmon with a little olive oil and sprinkle with ½ teaspoon kosher salt (spread evenly among the fillets) and freshly ground pepper.
