  • 1 english muffin
  • 2 eggs*
  • 1 prize every kosher salt and garlic powder
  • ½ tbsp butter
  • 1 teaspoon chopped chives
  • 1 Slice of cheddar cheese
  • 1 slice of tomato
  • 1 tbsp mayonnaise
  • ½ teaspoon Hot sauce (like cholula)
  • ½ teaspoon smoked paprika

  1. Toast the English muffin.
  2. Meanwhile, beat the eggs and add the salt and garlic powder. Place the butter in a small non-stick skillet over medium-high heat. Pour in the eggs and sprinkle with chopped chives. Cook, without turning, until the eggs are almost set, about 2 minutes. Swirl the pan to ensure all of the eggs are cooked.
  3. When the eggs are almost cooked, use a spatula to fold them in half and then in half again to form a wedge. Add the slice of cheese and cover the pan. Bake 30 seconds to 1 minute until cheese is melted.
  4. While the eggs are cooking, prepare the smoked mayonnaise: mix together the mayonnaise, hot sauce, and smoked paprika.
  5. Spread smoked mayonnaise on toasted English muffins. Add the eggs and slice of tomato (seasoned with a pinch of salt) and serve immediately.
