The mighty breakfast quesadilla is by no means an authentic Mexican recipe. It’s decidedly American and the only thing worthy of its title is that it’s filled with scrambled eggs. But Wow, it is satisfying! Scrambled eggs, black beans, and melted cheddar cheese sandwiched between toasted tortillas and dipped in guacamole? It’s simple in every way, yet a revelation in every bite. We just couldn’t stop eating it!

Ingredients for this breakfast quesadilla recipe

What do you put in a quesadilla for breakfast? Scrambled eggs of course! Otherwise: you can use freeform. The concept of a breakfast quesadilla is pretty loose: the term basically includes anything with two tortillas, cheese, and eggs. Imagine American breakfast meets Mexican food (again, nothing traditional or authentic). You can add bacon or sausage to your breakfast quesadilla, but we’re going meatless: why not? It’s incredibly delicious and super quick to make. Here are our ideal breakfast quesadilla ingredients:

  • scrambled eggs
  • Cheddar cheese
  • Black beans
  • Red pepper

Fry it in a pan, and the result will be a delicious comfort food: with a gooey, cheesy center and a nice scrambled texture. Oh: and it takes less than 15 minutes. You can do it in 10 minutes if you hurry! It’s perfect for broth – or even for lunch or breakfast.

Want that breakfast quesadilla on top? Prepare our chorizo-style eggs! We developed this concept with our Egg Tacos and it’s incredibly good. A handful of spices give the eggs an incredibly meaty flavor! Simply add ¾ teaspoon each of the following to the 2 eggs while beating:

  • chili powder
  • garlic powder
  • cumin

Want to make multiple quesadillas at once? If you want to make them for the whole family, it can be difficult to make them all at once. Here’s the solution: a baked quesadilla! This way they will all be golden and crispy at the same time. To make 4 quesadillas at once:

  • preheat the oven to 425 degrees Fahrenheit.
  • Use 8 eggs in scrambled eggs.
  • Brush a baking sheet with olive oil. Arrange the quesadillas on top.
  • Brush the tops of the quesadillas with olive oil.
  • Cook for 8 minutes, then turn and cook for another 7 minutes.

When you serve this quesadilla with a vegetarian breakfast (as you’d expect!), it’s a meal in itself: no side dish needed! But if you want to serve it for breakfast at dinner, add a side dish! Here are some quick meal prep options:

  • 2 tablespoons finely diced red peppers
  • 2 eggs*
  • ¼ cup Black beans
  • 2 tablespoons Melt butter
  • ⅛ teaspoon kosher salt
  • Freshly ground black pepper
  • ⅓ cup grated cheddar cheese
  • 2 6″ tortillas (flour or corn)
  • For dipping: guacamole, salsa and sour cream

  1. Dice peppers. In a small bowl, whisk the eggs* with a fork and add salt and pepper. Drain and rinse black beans.
  2. In a small non-stick skillet, add 1 tablespoon butter and heat over medium-high heat until melted. Add the eggs to the pan and fry until they begin to set, about 1 minute. If the eggs are just beginning to set, use a flat spatula to slowly scrape parts of the eggs and create wrinkles. Sprinkle with black beans, paprika and kosher salt. Continue cooking, scraping occasionally, until eggs are fully cooked, about 2 minutes. Pour into a bowl and set aside.
  3. Add the remaining tablespoon of butter to the pan and heat over medium-high heat. Add one tortilla, half the grated cheese, the scrambled eggs, the remaining cheese, and the other tortilla. Bake 1 to 2 minutes on each side until golden and crispy. Cut into wedges and serve with guacamole and salsa for dipping.

Remarks

* Top with chorizo-style eggs and stir in the following seasonings: ¾ tsp chili powder, ¾ tsp garlic powder, and ¾ tsp cumin.
