How to make fried potatoes quickly

You may have already guessed our quick baked potato hack from the photo. Here’s the magic: Instead of cooking the potatoes whole, cut them in half. That’s it! This simple one-minute trick saves about half the baking time. Because the potatoes are half as thick, they cook in half the time. As simple as that! There are just a few things you should know about this simple method:

  • Bake at 450 degrees. Frying vegetables over very high heat makes them crispy on the outside and tender on the inside.
  • Halve the potatoes, then brush with olive oil. No aluminum foil needed! Simply rub the potatoes lightly in olive oil.
  • Lay the cut side down. Cooking the potatoes cut-side down gives the best flavor (and a nice and crispy exterior).
  • Roast until tender, 25 to 35 minutes. Since potatoes vary in size, taste them and remove them from the oven when they are perfectly soft.

The description

These quick cook potatoes roast in half the time! This simple trick will become your #1 choice for making the perfect potato in just 30 minutes.


  • 4 medium red potatoes*
  • olive oil
  • salt and pepper

  1. Preheat the oven to 450 degrees Fahrenheit.
  2. Wash and halve the potatoes. Line a baking sheet with parchment paper. Place the potatoes on top and rub them with olive oil, just enough to cover them. Sprinkle them with kosher salt.
  3. Turn the potatoes cut-side down and prick the top several times with a fork.
  4. Bake until potatoes are tender and lightly browned around the edges, about 25 to 35 minutes depending on the exact size of the potatoes. Prick with a fork to assess doneness. Taste and add an extra pinch of salt if needed.
  5. To serve as a traditional baked potato, simply smash the top lightly with a fork. Serve immediately.

Remarks

*This recipe is easy to double: just fry 2 leaves! The cooking time has to be extended by a few minutes, as there is more roasting all at once. Cook al dente!
