This recipe turns the humble solo meal into a delicious dinner leading to a one-hit jackpot on a baking sheet. All quesadillas are prepared at the same time and have a nice and crispy exterior. In fact, it looks like a whole new take on this classic: like quesadillas 2.0. Here’s how to make a baked quesadilla casserole that’s so good, everyone will want more. (Everyone around our table was: true story!)

How to Bake Quesadillas

You can make any type of baked quesadilla with this method: the toppings are up to you! (Though we’ve shared our favorite smoked mozzarella filling below…so good!) Here are the basic steps for making quesadillas that bake in the oven instead of using a skillet:

  • preheat the oven at 425 degrees.
  • brush a baking sheet with olive oil. Place the tortillas on the baking sheet (rub them a little so they are coated with oil).
  • Add toppingsBe careful not to overfill!
  • collapse the quesadilla in a semicircle. (This makes turning easier.)
  • Cook for 8 minutes, then turn and cook for 6-7 minutes longer to golden brown. Cut into pieces and serve immediately.

The key to baked quesadillas: don’t overfill them! The amounts in our recipe below may seem small, but trust us: they’re more than enough. You don’t want to deal with toppings that fall all over the plate. Here’s what we used for these baked quesadillas, which we think are pretty much perfect:

  • Smoked mozzarella cheese: the key to taste! This makes this vegetarian quesadilla taste amazing
  • Cheddar cheese
  • Black beans with spices such as cumin, onion powder, garlic powder
  • Green Onion
  • Pico de Gallo

This topping was just the right combination of flavors and tasted like a restaurant style quesadilla (if we do say so ourselves). Everyone at the table couldn’t stop eating them. Suffice it to say that these disappeared very quickly!

  • ½ cup Canned black beans, drained and rinsed
  • 1 drizzle with olive oil
  • ¼ teaspoon every Cumin, garlic powder, onion powder and kosher salt
  • 1 big or 2 small spring onions
  • 1 cup grated cheddar cheese
  • 1 cup smoked mozzarella cheese
  • ½ cup Pico de Gallo
  • 8th 6″ tortillas (flour or corn)
  • For the garnish: guacamole, sour cream, salsa, cilantro

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Drain and rinse the beans, then toss with the olive oil and spices. Finely chop the spring onion.
  3. Brush a baking sheet with some olive oil. Place tortillas on a baking sheet and brush with olive oil.
  4. Top each tortilla with 2 tablespoons cheddar cheese, 1 tablespoon seasoned beans, 1 tablespoon spring onions, 2 tablespoons smoked mozzarella, 1 tablespoon pico de gallo, and 1 pinch kosher salt. If desired, add a squirt of hot sauce. Fold the tortilla into a semi-circle (this makes turning easier instead of making whole quesadillas with 2 tortillas). Finish for each tortilla, then brush the top with oil.
  5. Boil 8 minutes. Then flip and bake for another 6-7 minutes until golden brown and crispy on the outside. Cut each into 3 wedges with a pizza cutter. Serve with cilantro and sour cream, along with guacamole and extra pico de gallo for dipping.
