Fall has officially arrived here in Indiana! Our markets are already teeming with pumpkins, gourds and apples. Alex and I aren’t quite ready to start squash yet, knowing they’ll be there all winter! If you’re looking for quesadilla ideas, how about Apple Gouda Quesadillas? The salty and sweet combination is deliciously unconventional.


  • ½ cup grated smoked Gouda cheese (or aged cheddar)
  • ½ Apple spritzer (we used Jonathon)
  • 2 Sprigs of fresh thyme
  • 1 pinch of kosher salt
  • 2 Tortillas

  1. Grate the cheese. Cut the apple into thin slices. Remove the thyme leaves from the stem.
  2. Place a tortilla on a plate. Sprinkle with ¼ cup cheese, then place the apple slices on top. Top with another ¼ cup cheese, thyme leaves, and a pinch of kosher salt.
  3. Heat a large non-stick skillet over medium-high heat for a few minutes. Place the loaded tortilla on the griddle and place another tortilla on top. Cook until bottom is golden brown, then flip and cook until golden on the other side (a few minutes on each side).
  4. Take out the tortilla and cut into pieces with a pizza cutter. If you’re making multiple quesadillas at once, keep them warm in a 300°F oven.
