There isn’t too much not love pumpkin. A simple pumpkin spice candle is enough to give us that lovely fall feel. As the weather started to cool down, Alex and I made sure to stock up on canned pumpkins and experiment with pumpkin recipes. Well, somehow my sweet tooth has seriously deteriorated over the last few years. I attribute some of this to age (perhaps your sugar tolerance decreases as you age?) and some to eating whole foods instead of processed ones. So I decided to create a pumpkin mousse parfait “dessert” that was just sweet enough and still had the pumpkin goodness I was looking for. Read on for the recipe!

Make this Pumpkin Mousse Parfait

The star of this recipe is undoubtedly the homemade pumpkin mousse. To make it, all you have to do is beat the pumpkin pie filling with cream cheese until light and fluffy. You can use an electric mixer here, but whipping the mixture by hand works just as well (you’ll want to whip it for a few minutes to incorporate plenty of air). Just be sure to buy pumpkin pie filling and not canned pumpkin as the latter is not sweet at all and will seriously change the flavor of this dish.

This pumpkin mousse parfait also calls for homemade pumpkin spice granola. It’s definitely worth the time and energy to make your granola at home. But if you don’t have time to make the granola topping for this pumpkin mousse parfait, you can use your favorite store-bought brand. We only recommend choosing a suitably seasoned granola (it’s a pumpkin spice recipe, after all!).

The final layer of this pumpkin mousse parfait recipe is a layer of sweet Greek yogurt sweetened with maple syrup (or honey) and vanilla to taste. Instead of buying store-bought vanilla yogurt, making your own sweetened vanilla yogurt at home allows you to control the level of sweetness: and use a natural sugar like maple if you wish!

For the pumpkin spice granola

  • ¾ cup old-fashioned oatmeal
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons chopped pecans
  • ¼ teaspoon Pumpkin Pie Spice
  • 1 tbsp vegetable oil
  • 1½ tablespoons maple syrup or honey

For the yogurt

  • 2 cups plain greek yogurt
  • 1 teaspoon Vanilla
  • 2 tablespoons Maple syrup honey

For the pumpkin mousse

  • 6 tablespoons cream cheese
  • 1 cup Pumpkin Pie Filling (sweet)

  1. Prepare the granola: Preheat the oven to 300°F. In a small bowl, mix together rolled oats, pumpkin seeds, chopped pecans, pumpkin pie spice, vegetable oil, and maple syrup or honey. Spread the granola on a baking sheet and bake until golden brown, about 25 to 30 minutes.
  2. Flavor the yogurt: Mix the yogurt with vanilla and maple syrup or honey.
  3. Prepare the pumpkin mousse: Beat the cream cheese and pumpkin pie filling until fluffy.
  4. Serving the parfaits: Place spoonfuls of yoghurt, pumpkin mousse and muesli into serving glasses, alternating as you like.
