Here’s one of our easiest kitchen hacks: popovers! If you’re looking for an easy side dish, popovers are the perfect quick and easy recipe to cook while dinner cooks. Our classic recipe is for popovers in a muffin tin, rather than the traditional baking of them in 6-ounce pudding cups (because who has those?). Once you try them, you’ll want to use this trick all the time!

What is a popover?

A popover is a bit like a bun, but inside it’s creamy and filled with air! The name literally comes from “jumping” around the sides of the pan. Popovers are popular in Southern cuisine but are made throughout the United States. They are perfect as a side dish for dinner parties or Christmas celebrations. This recipe is easy to remember: we memorized it so we could make it while the soup simmered on the stove.

How to make popovers

This homemade popovers recipe is super easy to make. Here’s how:

  • Mixed: Place the eggs in a blender and blend until beaten and pale yellow. Heat the milk in the microwave until it feels warm but not hot. Place the milk, flour and salt in the blender and blend to form a paste.
  • Preheat muffin tin: Melt ½ tablespoon butter and brush generously in and around the muffin tins. Place the muffin pan directly on the pizza stone in the oven or peel to preheat.
  • Bake for 25 minutes: When the oven is done, pour the batter into the muffin tin, filling each of the 12 tins halfway. Bake for 25 minutes or until popovers are puffy and golden.

Tips for the best homemade popovers

The popovers are baked in a hot oven until they “pop”. In our popover recipe, we use a pizza stone or pizza steel in the oven to regulate the oven temperature. We tried this recipe without the pizza stone and it’s not that consistent so make sure you have a pizza stone. (Here’s the pizza stone we’re using!)

You will also need a regular muffin tin. Most traditional popover recipes call for 6-ounce pudding cups, which makes for huge popovers! We love the idea of ​​little muffin-sized popovers, and not everyone has pudding cups. So we adapted this recipe to make popovers in a muffin pan instead.

  • 2 eggs
  • 1 cup all purpose flour
  • 1 cup milk
  • ½ teaspoon kosher salt
  • ½ tbsp butter, for greasing

  1. Place eggs in a blender and blend until beaten and pale yellow.
  2. Microwave the milk for 30 to 40 seconds until warm to the touch but not boiling hot. Place the milk, flour and salt in the blender and blend to form a paste. Let stand while the oven preheats.
  3. Preheat the oven to 425F. Place a pizza stone or pizza pan* in the oven to preheat.
  4. Melt ½ tablespoon butter; Generously brush the butter in and around the muffin tins. Place the muffin pan directly on the pizza stone in the oven or peel to preheat.
  5. When the oven is done, pour the batter into the muffin tin, filling each of the 12 tins halfway.
  6. Bake for 25 minutes or until popovers are puffy and golden. Allow to cool for a minute or two, then remove from cups (disengage with a knife if necessary) and serve hot. Best served immediately. Continuing, heat in a 350F oven until warm and crispy, about 5 minutes.

Remarks

Using a pizza stone regulates the heat in the oven and ensures even cooking!
