How to make a protein mousse: the dry shake

Adding egg whites to cocktails might sound retro, and it is: it’s a tradition that dates back to the 1860s! The foam gives the top of the drink a frothy texture and a rich, creamy flavor with every sip. Classics like Gin Fizz, Ramos Gin Fizz and Whiskey Sour are traditionally served with this frothy topping. The key to making a protein froth is a special technique called jerking. This is how it works:

  • Shake the drink ingredients without ice First. This allows the protein in the egg to start foaming instead of being diluted by the ice.
  • Then add ice and shake again. This will cool the drink and increase the foam. Strain into the glass and you will get a thick layer of white foam. (Note: citrus is needed for foaming, so you need lemon in combination with pomegranate.)
