Pita chips are flatbreads that are cut into pieces and baked until golden. It’s easy to make at home if you follow a few tips. Once made, you hardly need a recipe and you can get creative with the spices. Here are some tips to keep in mind when making this pita chip recipe (or continue to the recipe below):

  • Bake at 400 degrees Fahrenheit. This will make the flatbread perfectly crispy.
  • Cut the pita pockets into two individual layers. Again, thin layers make for the crispiest fries! The easiest way to separate the bags is to cut around the outside of the bread with kitchen scissors.
  • Brush with olive oil. A little fat is needed to make them crispy and golden.
  • Season with fine sea salt. Our standard salt is kosher salt, but fine salt sticks best to chips.
  • Bake for about 10 minutes until golden brown. Exact cooking time depends on the brand of pita and your oven. Be sure to rotate the baking sheets about halfway through cooking for more even browning.

These pita chips keep well in storage. Here are some tips to keep the fries crispy over time:

  • Bake until uniformly crispy and golden brown. Any residual moisture can soak them over time.
  • Cool it down as long as possible before storing it. They will become crispier as they cool. We recommend refrigerating for at least 20 minutes before storing, but the longer the better. If you can leave them at room temperature for about 1 hour, even better.
  • Store in an airtight container for at least 1 week. As long as they are thoroughly dried and refrigerated prior to storage, they should stay crisp for at least 1 week. Ours were still crispy and tasty after 2 weeks, but shelf life may vary.

  • 3 pocket flatbreads*
  • 2 tablespoons olive oil
  • 1/2 at 3/4 teaspoon of fine sea salt

  1. Preheat oven to 400°F.
  2. Cut each pita pocket into two easy rounds: The easiest way is to use kitchen scissors to cut around the edge of the pita.
  3. Brush each pita with olive oil on both sides. Then cut each circle into 8 wedges using a pizza cutter or kitchen scissors. Place the fries in an even layer on two baking sheets (blank and unlined). Spread the fries with fleur de sel evenly on the trays.
  4. Bake until golden and crispy, about 8 to 10 minutes, turning pans in half to evenly brown. If they’re still not golden after 10 minutes, you can bake them for another minute or two: be careful as they can darken quickly. Exact cooking time depends on the brand of pita and your oven.
  5. Remove from the oven and let cool before eating. Chill for at least 20 minutes before placing in an airtight container for storage. Can be stored at room temperature for 1 to 2 weeks.

Remarks

*We recommend using pita bread as cutting in half will make the fries thinner. Avoid the type of flatbread that is thick and single-layered.
