How to make this pita bread recipe

Maybe you don’t have time to make pita regularly (neither do we). But doing it every once in a while is a treat! This pita bread recipe is a perfect baking project for beginners and a fun thing to do with kids too. It’s amazing to see the just puffed up dough in flatbread pockets in the oven – almost like magic!

This flatbread recipe uses a little whole wheat flour for extra nutrition and a nutty flavor. It makes sense to have a stand mixer and a pizza stone for this, but you can also use both. (Here’s the copper stand mixer we use at home.) Combine the ingredients for the dough: flour, water, yeast, batter, salt, and honey. If you like, you can use maple syrup for vegans. Mix them together in your stand mixer or knead them by hand until the dough comes together, about 10 minutes. Then let it sit for 45 minutes (known as “proofing”).

After this flatbread recipe has aged for 45 minutes, it’s time to bake! You can either bake with a pizza stone (here’s the best pizza stone we’ve found) or place the flatbread on your oven racks. Roll the dough into 8 rounds, about 7 inches in diameter. Wait 15 minutes for the dough to relax. Then put 4 pieces at a time in the oven. Watch the pita pockets expand like magic! It’s incredibly satisfying to know that you’ve made a pita bread recipe with your own hands. And it’s so delicious you’ll never want to buy it in the store again!

  • 1 cup whole wheat flour
  • 3 cups all purpose flour
  • 2 teaspoons instant yeast
  • 1 ½ cups Hot water
  • ½ teaspoon kosher salt
  • ½ tbsp honey or maple syrup (for vegans)

  1. In the bowl of a stand mixer, combine all of the above ingredients. Mix the ingredients with a spatula until a rough ball forms. (Or mix the ingredients together by hand, then knead until a dough forms, about 10 minutes. Skip to step 3).
  2. Attach the mixer’s dough hook and turn the mixer to the lowest setting. Slowly increase the speed to medium, adding more water or flour as needed to form a slightly sticky dough. Knead at medium speed for 6 minutes.
  3. When kneading is finished, remove the kneading hook. Set the bowl in a warm place, cover with a towel and wait until it has doubled, about 45 minutes.
  4. Preheat the oven to 500°F, using a pizza stone if you have one. Divide the dough into 8 equal parts and shape each part into a small ball.
  5. On a lightly floured work surface, roll out each ball of dough into a circle using a rolling pin. The circle should be about ⅛ to ¼ inch thick and about 7 inches in diameter. Leave for 15 minutes.
  6. When baking, place 4 circles of dough in the oven on the pizza stone or directly on the oven rack. Bake until puffed and light golden brown, about 2 minutes on each side. Flip with tongs and continue frying on the other side for 1 to 2 minutes.
  7. Remove the pita from the oven, lightly press the puffs together and arrange on a plate covered with a tea towel. Bake the other 4 flatbreads. Then wrap all the pitas in the towel and place them in a bag for about 15 minutes to trap the steam and leave a naturally soft and fluffy pita. If desired, you can freeze the flatbreads in a sealed plastic bag after baking.
