Here’s a delicious pineapple juice cocktail we can’t believe we haven’t tried…until now. The Pineapple Mojito! The classic Mojito is one of our best cocktails ever: tangy, minty and cleverly simple. Add tropical pineapple to the mix and it creates a symphony of flavors! The tart sweetness of the fruit perfectly balances the tangy lime and sweet, refreshing mint. Every time we try a new mojito flavor, we fall more in love with this classic cocktail.

What’s in a Pineapple Mojito?

The Pineapple Mojito is a fruity take on the Classic Mojito, a classic cocktail invented in Havana, Cuba. The drink’s origins date back hundreds of years, but it took off in America in the 1930s when Ernest Hemingway helped popularize the modern version.

Pineapple spinning simply adds pineapple juice to the classic ingredients. What you need for this cocktail:

Everything you need to know about making a pineapple mojito? How to Chop Mint! When grinding, herbs or fruits are gently crushed to release their juice. This is how you bring the mint flavor into the drink instead of just using it as a garnish. Here’s what you need to know about making this pineapple mojito:

  • Use a cocktail pestle. It’s the right tool for the job! This is the cocktail muddler we’re going to use. You do not have ? Use an unfinished wooden spoon.
  • Crush the mint first. Mash the herb gently to extract all the oils. You can do this right in the shaker. (Feel it as you crawl: isn’t it amazing?)
  • Add remaining ingredients, glaze and shake! Then filter the drink. Don’t have a cocktail shaker? You can use a glass jar with a lid (drill holes in the lid for straining).

Instead of making a single drink, you can make a pitcher of pineapple mojito! It’s perfect for entertaining. Make this mojito pitcher recipe but add pineapple juice. The pitcher uses mint syrup to infuse the mint flavor rather than blending. Here’s what to do:

  • Make the mojito pitcher, by adding 1 cup of pineapple juice to the pitcher with the mint syrup. (Make sure the pitcher is big enough!)
  • Add additional pineapple wedges and pitcher mint as a garnish. like that !

  • 6 Mint leaves, plus extra for garnish
  • 2 ounces* White Rum
  • 1 ounce lime juice
  • 1 ounce pineapple juice
  • 1 ounce plain syrup or maple syrup
  • 2 at 4 ounces of sparkling water
  • To serve: ice cream (try clear ice), pineapple wedges

  1. Mash the mint leaves in a shaker. Add rum, lime juice, pineapple juice and simple syrup and fill the shaker with ice. Shake until cool.
  2. Put ice in a glass and strain the liquid. Fill the glass with sparkling water. Garnish with additional mint leaves and pineapple wedges.
  3. Pitcher variant (8 servings): Add 1 cup of pineapple juice to this mojito pitcher recipe and garnish with pineapple wedges and mint.
