If you’re looking for something to rival a big, juicy burger, a portobello mushroom burger ticks all the boxes. Yes, a large mushroom on a bun. A little unexpected but true.

Mushrooms can be polarizing for some: and I was a real mushroom hater until recently! But when I gave them a try, I realized that portobello mushrooms aren’t the same as those sticky black chunks in cream of mushroom soup. These are juicy, aromatic and totally delicious. I was suspicious of mushrooms for years until I came across portabello. Now I can’t think of anything better to throw on the grill than a portobello mushroom burger! And don’t worry if you don’t have a grill, a roasted portobello is just as good!

For this portobello mushroom burger we went for Mediterranean flavors. We made a batch of our easy Basil Nut Pesto and used garden fresh tomatoes to build these burgers. To top it off, the melted provalone cheese makes for a super tasty and filling burger. We were pleasantly surprised at how easy they were to make and even more impressed with the delicious blend of flavors. I think the word “perfection” might have been muttered between bites. How to Grill Portobello Mushrooms

Portobello mushrooms are very easy to grill. For our Portobello Mushroom Burger, we marinated it in a mixture of balsamic vinegar and olive oil before grilling. Let them sit for about 15 minutes while the grill preheats. Before marinating the mushrooms, be sure to remove the hard stalks: this will make them easier to eat. When the grill is ready, place the mushrooms on the grill and fry on each side until juicy, about 5 minutes. That’s it! For this portobello mushroom burger, we also melted provalone cheese over the top in the last minute of cooking.

  • 4 Portobello mushroom caps
  • 2 tablespoons aged balsamic vinegar
  • 2 tablespoons olive oil
  • Kosher salt
  • Ground fresh pepper
  • 4 Slices of provolone cheese
  • 4 Ciabatta wraps
  • ¼ cup Basil pesto (store-bought pesto, homemade or vegan)
  • 1 tomato
  • 1 cup young arugula leaves

  1. Preheat grill to medium heat.
  2. Remove the stems from the portobello mushrooms. In a small bowl, mix together the balsamic vinegar and olive oil. Place the mushrooms on a baking sheet. Brush the front and back of each mushroom with the marinade. Sprinkle with kosher salt and pepper and let sit for 15 minutes.
  3. Place the mushrooms on the grill (or in a grill pan) and fry for about 5 minutes on each side until juicy. At the last minute, place slices of provolone cheese on top of each mushroom and grill until melted, then remove from grill. Brush ciabatta rolls with olive oil and place on the grill until toasted.
  4. Slice the tomato. Remove any tough stems from the arugula (not necessary for baby arugula).
  5. Place each toasted portobello cap on half of a roll. Garnish with a spoonful of pesto, a slice of tomato, a handful of arugula and the other half of the bun.
