Recipe for pesto pizza

We love making pizza at home. This is one of the few meals that I think is worth the extra effort. We’ve spent a lot of time discovering our favorite style and then figuring out how to reliably replicate it. We prefer thin pizzas, but not too crunchy and especially not too greasy! This easy pesto pizza recipe ticks all the boxes and some. It only requires a handful of ingredients and is a breeze if you already have pizza dough in the freezer.

How to make pesto pizza

Our love of homemade pizza is also one of the few excuses I have for monotasking in the kitchen (sorry, Alton!). We’ve found that if you make pizza often, a pizza stone is a must. Pizza stones absorb moisture as the pizza bakes, resulting in a crispier crust. If you’re using a pizza stone, you’ll need to place it in the oven while it’s preheating. But a word of warning: pizza stones have a tendency to snap in half, so be sure to follow our care instructions!

When making this pesto pizza recipe, we recommend keeping it simple and not adding any extra toppings. The homemade pesto shines here and the tomatoes ensure the right freshness. However, if you absolutely want to add more toppings like onions or peppers, sauté them until slightly softened before adding them to your pizza. This will ensure your toppings are fully cooked in the oven and extract some moisture from the veggies (which is essential for preserving that perfectly crispy crust!).

Serve this homemade pesto pizza recipe with a salad or roasted veggies. It’s best eaten right away, but you can simply reheat this pizza in a pan on the stovetop or in the oven. Avoid microwave leftovers as your pizza may get a little chewy while reheating.

The description

This pesto pizza recipe only requires a handful of ingredients and is a cinch to make if you already have pizza dough in the freezer.

  1. Follow the Best Pizza Dough recipe to prepare the dough. (It takes about 15 minutes and 45 minutes to rest.)
  2. Place your pizza stone in the oven and preheat to 500°F. Slice the tomato.
  3. When the oven is done, dust a pizza peel with corn or semolina flour. (If you don’t have a pizza peel, you can use a rimmed baking sheet or the back of a rimmed baking sheet. But a pizza peel is worth the investment!) Roll out the dough in a circle; For instructions, see How to stretch pizza dough. Then carefully place the dough on the pizza peel.
  4. Assemble pizza quickly. Spread the pesto over the dough, sprinkle with as much cheese as you like, add the tomato slices and garnish with grated fresh Parmesan and a pinch of salt.
  5. Use the pizza peel to carefully transfer the pizza onto the preheated pizza stone.
  6. Bake the pizza until the cheese and crust are golden brown, about 5 to 7 minutes in the oven (or 1 minute in a pizza oven). Try to let the pizza cool before eating so you don’t burn all your taste buds – this is always the hardest part!
