This pastry crust is flaky, tender, and perfectly seasoned: no one would guess there was no butter. You can make it with coconut oil or vegan butter, and we’ve tested it on friends and family: no one will notice the difference! We love using this crust for our apple pie or pumpkin pie, but you can use it as a plant-based substitute in any of your favorite pie recipes. Let’s go to the pastries!

Ingredients for vegan cake batter

This vegan tart base basically looks like a normal base, but replaces butter or lard! We tested this recipe with coconut oil and vegan butter and both work. This makes it a super versatile recipe for whatever plant-based butter substitute you have on hand. Here is the short list of ingredients you will need for this recipe:

Notes on vegan butter

With the interest in plant-based coking these days, it’s becoming easier and easier to find minimally processed vegan butter to use in recipes like vegan pie crust and vegan cookies. When shopping for vegan butter, check the ingredient lists and find one that’s minimally processed with real food ingredients. Another advantage is the use of organic products! We used Miyoko’s vegan butter, which is made primarily from cashews and coconut (and happens to be organic).

Definitely don’t buy anything marked with margarine! Margarine is way too soft to make pie crust.

You can choose coconut oil or the vegan butter route for this vegan pie crust, and they both make for a perfectly flavorful crust! Here’s what we learned from testing these plant-based butter substitutes:

  • Vegan coconut oil cake base: The dough will be nice and crispy and crunchy! We recommend using refined coconut oil as you may not perceive much coconut flavor.
  • Vegan butter cake batter: The batter is flaky with a slightly tastier, buttery flavor than coconut oil. The exact texture and flavor will depend on the brand of vegan butter and its composition.

When preparing a vegan cake base, it helps to have a few things on hand: However, you only need the cake mold!

What is a dough sheet? Why use? A baking sheet is a piece of cloth used for rolling out dough, biscuits, biscuits, and other baked goods. It helps prevent dough from sticking and provides useful lines for cutting out the circle of dough. A rolling pin cover also prevents dough from sticking to the rolling pin. These tools are quite cheap and very useful for making the most perfect vegan pie crust. However, they are not mandatory if you don’t have them handy!

  • Refrigerate for 1 day: You can make this vegan pie crust ahead of time: wrap in plastic wrap or foil and refrigerate until ready. Do this if you plan on baking during the day.
  • Freeze for 1 month: Do you want to do it more in advance? Wrap it in plastic wrap and put it in the freezer. It stays good for at least 1 month and probably longer.

Here’s how to make a vegan pie crust! This puff pastry can be made with coconut oil or vegan butter, and no one would guess that it’s plant-based.


  • 1⅓ cups all purpose flour
  • ½ teaspoon kosher salt
  • ¼ teaspoon baking powder
  • 8 tablespoons refined coconut oil or vegan butter (not Margarine!)
  • 6 at Seven tablespoons of ice water

  1. In a medium bowl, combine all-purpose flour, kosher salt, and baking powder. Use a grater or micro-slicer to grate the vegan butter into the bowl of dry ingredients (it looks like grated cheese!) or add small drops of coconut oil to the flour mixture. Then stir gently with a spatula to coat the butter or coconut oil with the flour.
  2. Sprinkle 6 tablespoons of ice water over the flour and mix gradually with a fork until the dough sticks. Add water, tablespoon at a time, until the dough comes together with your hands but is not sticky (add a little more water or flour if needed). Form the dough into a ball and refrigerate in a covered container until the filling is set, or at least 30 minutes.
  3. If you have a baking sheet, line it up and dust with flour; otherwise, flour a clean work surface. Put on a rolling pin cover (optional) and coat the rolling pin with additional flour. Place a ball of dough on the towel and roll it evenly, center to edge, until dough is about ⅛ inch thick. Using a pizza cutter (corresponding to the 9-inch circle on the baking sheet), cut the dough into an even 12-inch circle.
  4. Using a rolling pin, transfer the batter into a 9-inch cake pan (standard size, not Deep plate). Carefully center the batter and slide it to the bottom of the pan. Fold the excess 1-inch pastry back and seal to form a rim. Using your index finger and thumb on one side and a knuckle on the other, pinch the edges of the crust.
  5. Storage Instructions: To store, wrap the bowl in plastic wrap or foil and refrigerate until ready to fill or freeze for up to 1 month.
