Why use both butter and olive oil to make hash browns? It adds complexity and nuance to the taste: you can taste the difference! The butter is flavorful and rich, and the olive oil adds a subtle nuttiness. Alex and I started using butter and olive oil together a few years ago, and we love using the “olive oil and butter” trick to make things taste amazing.
If you’re vegan, you can simply substitute extra olive oil for the butter. If you like the idea of flavor nuances, you can use coconut oil instead of butter. It adds a slightly fruity essence, but it’s not too coconuty.

Smoked paprika is indispensable!
Smoked paprika powder can’t be missing in these roast potatoes, if you can find it! You can substitute for the standard paprika, sometimes called sweet paprika or Hungarian paprika. What is smoked paprika? It’s a Spanish take on paprika that adds a smoky flavor but with no heat or spices! It is made from dried chillies that are smoked over a fire and then crushed. You can use any type of skillet to make these potato fries! It’s easier to use a non-stick pan, although a cast-iron pan will appear sturdier and more rustic. If using cast iron, make sure the potatoes are golden brown before turning them. If they turn brown, they’re better off the pan.

- 1 Pound yellow or red potatoes
- 2 tablespoons olive oil
