This recipe is a perfect example of our approach: raisins, pecans, and red onions are simple ingredients, but using them on a pizza is a bit unusual.

This Pecan Raisin Pizza is a quick and easy ready-to-eat dinner recipe with pecans, mozzarella cheese, red onions and fresh thyme.


  • 1 Handful of pickled red onions OR ¼ small red onion
  • 4 Naan bread (we used whole grain bread)
  • 1 cup grated mozzarella cheese
  • Pecorino or Parmesan cheese
  • ½ cup Pecans, chopped
  • 1 small bunch of black or red grapes (approx 15 Grapes)
  • 1 a handful of fresh thyme
  • Kosher salt

  1. If using, cook the pickled onions at least 1 hour before serving. (You can also use fresh red onions; see below.)
  2. Preheat oven to 450°F.
  3. Roughly chop the pecans with your hands. Place them in a small skillet, then heat over low heat for 2 to 4 minutes, stirring frequently, until fragrant and lightly toasted. Remove from fire.
  4. Halve the grapes.
  5. If using red onions, thinly slice the red onion. If desired, rinse the slices under cold water and then drain (this will help remove some of the bite).
  6. Place the naan directly on the oven rack and pre-cook for 2 to 3 minutes on each side. Take the naan out of the oven and let it cool down a bit.
  7. Top each naan with about ¼ cup grated mozzarella cheese, a thin layer of pecorino cheese, toasted pecans, raisins, and pickled onions. Garnish with thyme leaves (remove tender leaves and stems from pizza) and sprinkle with kosher salt. Cook for 4 to 5 minutes until cheese melts.
