  • 1 Salmon fillet or fillets with skin beaten (preferably wild)
  • ¾ teaspoon kosher salt
  • Freshly ground black pepper
  • 1½ tablespoons Dijon mustard
  • 1½ tablespoons honey or maple syrup
  • ¼ cup finely chopped pecans
  • 2 tablespoons Italian panko (or Italian breadcrumbs; gluten-free if desired)*
  • 2 tablespoons grated parmesan cheese

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Bring the salmon back to room temperature and pat dry. Season the salmon with salt and pepper. In a small bowl, mix Dijon mustard and honey, then brush the fish in an even layer.
