Refrigerate for a few hours for best results

  • 1 cup creamy peanut butter (no added sugar)
  • ½ cup honey (or ½ cup agave syrup for vegans)
  • 3 ½ cups Old fashioned oatmeal
  • ½ teaspoon kosher salt
  • ½ teaspoon Cinammon
  • ½ cup Mini chocolate chips, divided

  1. Toast oatmeal: Preheat the oven to 350 degrees Fahrenheit. Place the rolled oats in a single layer on a baking sheet and toast until lightly browned, 10 minutes. (This step gives the oats an amazing toasty flavor: don’t skip it!)
  2. Mix the ingredients: Place oatmeal in a large bowl and combine peanut butter, honey, oatmeal, salt, and cinnamon in a bowl. Stir in ¼ cup chocolate chips.
  3. Moldings: Place a sheet of parchment paper in a 9″ x 9″ pan and allow the edges to drape over the sides. Pour the mixture into the mold and press into an even layer. Add the remaining ¼ cup chocolate chips on top of the bars. Use a small glass to roll them over to make them as smooth as possible.
  4. Freeze and cut sticks: Freeze the bars for 10 minutes. Then remove the pan from the freezer and use the parchment paper to lift the bars out of the pan. Use a sharp knife to cut them into 14 bar shapes (measuring 4 ½ x 1 ¼ inches) or any size you like. Can be kept in the fridge for up to 3 weeks. The texture will set after 2 hours of chilling, so if you have time, do so before tasting the first bar.
