We’ve experimented with frozen foods, but the flavor is muted and bland compared to fresh. For the equipment you will need a blender and an ice cream maker. The ingredients for the peach sorbet are:

  • Fresh ripe peaches

  • Sugar

All you have to do? Blend the peaches, lemon juice, and sugar with ice, then freeze the mixture in an ice cream maker for about 20 minutes. It comes together in a nice frosty mush!

First of all, having very ripe peaches is absolutely essential for this recipe! If the peaches are even a little hard, the taste will be too tart. Here are some tips for judging ripeness and a tip for substituting frozen peaches:

  • Freeze the bottom of the ice cream maker a day before making this recipe. You want it to be as cold as possible for the best texture when churning.

Peach sorbet tastes best the day it’s made, so give it a stir just before serving if possible! You can also freeze it for a few hours for a firmer texture. Freezing overnight makes it very firm, but it works for leftovers. Here’s what you need to know about service and storage:

  • Prepare the porridge up to 2 days in advance if desired. Simply place the peach puree in the fridge and stir just before serving.
  • Line a storage container with parchment paper for storage. This prevents the sorbet from freezing to the edges of the container and makes it easier to defrost.
  • Stir the sorbet up to 2 hours before serving. Or you can stir the same day and freeze about 2 hours before serving. This gives a nice solid texture to pick up like in the photos above.
  • Leftovers keep for 1 week, but thaw at room temperature for 20 minutes. Take the time to leave the container on the counter until it has thawed.

This peach sorbet recipe makes a sweet and creamy frozen mush! It’s easy to make this amazing summer dessert.


  • 3 cups sliced ​​fresh peaches (about 1¼ pounds), with or without skin*
  • ½ cup Sugar
  • 1 tbsp lemon juice
  • 1 pinch of kosher salt
  • ½ cup Ice

Note: Make sure the base of the ice cream maker is frozen overnight before making this recipe.

  1. If desired, peel the peaches by boiling them in water for 45 seconds, then placing them in ice water for 1 minute. Then you can remove the shells with your fingers. Or save the bowls for the sorbet: this won’t alter the flavor or texture; it just has a mottled look like the photos above.
  2. Place the peaches in a food processor or high speed blender and puree. Add the sugar, lemon juice, ice and salt and blend until smooth. (To move forward, you can refrigerate at this point for up to 2 days until you want to stir.)
  3. Pour the mixture into an ice cream maker and freeze for 20 to 25 minutes. The texture will be frosty and creamy at this point. Serve immediately. Or line a container with parchment paper and freeze for up to 2 hours daily. Store in a sealed, parchment-lined container for up to 1 week; allow to come to room temperature for about 20 minutes before demolding.

Remarks

*Flavor is best with fresh peaches. If everything you have is frozen, thaw at room temperature before preparing the recipe.
