Got some ripe peaches on the counter? Try this sweet and delicious peachcompote! A compote is one of the best ways to use up almost overripe fruit like peaches, berries, apples, or pears. Boil fruit with a little sugar and you end up with a bright, fruity sauce that’s perfect for ice cream, oatmeal, pancakes and more. Flavored with a touch of cinnamon and vanilla, it’s heavenly with every bite. We served this over melted vanilla ice cream and couldn’t stop scooping spoonfuls.

A compote is a fruit sauce in which fruit is boiled with water, sugar, and spices until thickened. You can serve the compote as a dessert or use it as a sauce for breakfast dishes like yogurt, oatmeal, and waffles. This peach compote has a short list of ingredients and is ready in just 10 minutes! Here’s what you need:

  • lemon juice
  • Vanilla

Use fresh or frozen peaches…or expired peaches

A compote is a great way to use up fruit that’s a bit past its prime. Since you’ll be cooking them, it’s perfect for peaches that are just perfectly ripe (but not moldy, of course!). It’s a great way to reduce food waste when you have perishable fruit. In our case, we had a batch of peach-picking peaches that needed to be used up: a compote hit the spot!

But if you’re just craving peach compote, you can use regular ripe peaches or even frozen peaches. You may need to use a little more sugar if using frozen peaches. Taste it when it’s done and add a little more sugar if needed.

How to Make Peach Compote (Basic Steps)

The peach compote is quick and easy to prepare: you will need about 5 minutes to prepare the ingredients and 5 minutes to cook. When you’re ready to get started, continue with the recipe below. If not, here are the basic steps that outline the process:

  • Heat peaches, sugar and spices over medium heat in a can.
  • Cook for about 5 minutes, mash the peaches with a potato masher. If you would like a thicker sauce, you can also dissolve 1 teaspoon of cornstarch in 1 tablespoon of water and add to the sauce. But we think it’s pretty thick!

  • 2 cups chopped ripe peaches (1 book or 2 medium peaches)
  • ¼ cup sugar (or maple syrup)
  • ½ tbsp fresh lemon juice
  • 2 tablespoons the water
  • 1 pinch of kosher salt
  • ½ teaspoon vanilla extract
  • ¼ teaspoon Cinammon

  1. Chop the peaches, leaving the skin on.
  2. Bring the peaches, sugar, lemon juice, water and salt to a boil in a saucepan and mash lightly with a potato masher until they break into irregular pieces. Simmer on low for 4-5 minutes until reduced and creamy. (If it starts to get dry, you can add a little more water.)
  3. Remove from fire. Stir in the vanilla and cinnamon. Taste and add additional sugar if you like. The sauce will continue to thicken as it cools. Serve immediately or refrigerate until ready to serve. Refrigerate for up to 1 week or freeze for up to 3 months.
