There are many foods that can be used as egg substitutes for pancakes… but what is the absolute better under? When we make pancakes or vegan baked goods, we usually substitute a flax egg. A flaxseed egg is ground flaxseed mixed with water, resulting in a gel-like substance that acts as a binding agent. But we don’t always have flaxseed on hand. But here we wanted to make a no-egg pancake recipe, using a substitute that’s always on hand in the pantry.

The best egg substitute for pancakes? Peanut Butter – or any nut or seed butter! This replacement does several things: It reproduces wealth Egg count, moisture content and acts as a binder to hold pancakes together. Best of all, it adds a subtle nuttiness to the flavor that makes them irresistible! The substitution rate? 1 egg equals 2 tbsp nut butter.

You can use any type of nut butter or seed butter in these eggless pancakes! Peanut butter is the most common thing in our pantry, but we stock several different types of nut butters. Be sure to use creamy nut butter in any case: this will allow it to blend into the texture of the pancakes. Here are some nut butter options:

  • peanut butter: Peanut butter has the strongest nutty flavor! Try it yourself.
  • almond butter: Almond butter is a bit more neutral. Try it yourself.
  • cashew butter: Cashew butter also has a mild taste! Try it yourself.

  • all purpose flour
  • whole wheat flour: it is important for texture and color
  • Cinammon
  • baking powder
  • Light Brown Sugar: You can substitute granulated sugar, but keep in mind that the color of the pancakes will be lighter
  • Salt
  • Neutral Oil: Use organic vegetable oil, canola oil or grapeseed oil
  • nut butter: Peanut butter, almond butter, cashew butter, or sunflower butter
  • Milk: 2%, oat milk or almond milk

Cooking Tips: The key is weak and slow!

The last thing on your mind about these egg-free pancakes: some cooking tips! Since the texture is a little different than a regular pancake, be careful not to overheat. Here’s what you need to know about cooking these pancakes:

  • Low and slow is key! Make sure the heat is low to medium low! These eggless pancakes can burn more easily than the standard pancakes. Cook them too high and they will turn brown on the outside and gooey on the inside. But go low and slow and they will come out perfect.
  • When to change? When bubbles form and burst. When is the right time to flip a pancake? Wait for bubbles to form on the surface and begin to burst. Sometimes it seems like you’ve waited too long, but trust us! This trick always works.

  • ½ cup all purpose flour
  • ½ cup whole wheat flour
  • ¼ teaspoon Cinammon
  • 1 tbsp baking powder
  • 2 tablespoons light brown sugar (or granulated sugar)
  • ½ teaspoon kosher salt
  • 2 tablespoons neutral oil
  • 2 tablespoons creamy peanut butter, almond butter, or cashew butter (or nut-free sunflower butter)
  • 1 ¼ cup Milk of your choice (2%, oat milk or almond milk)

  1. In a medium bowl, whisk together all-purpose flour, whole wheat flour, cinnamon, baking powder, sugar, and kosher salt.
  2. In a liquid measuring cup, whisk together the oil and peanut butter. Add it to the batter and then immediately add the milk.
  3. Stir the wet ingredients into the dry ingredients until a smooth batter forms.
  4. Lightly grease a pan with coconut oil and wipe off excess grease with a paper towel. Heat the pan over low heat. Pour the batter into small circles (just under ¼ cup each). Bake the pancakes until the bubbles burst on top and the bottom is golden brown: low and slow is key! Then turn them over and cook until done. Repeat with the rest of the batter, adjusting the heat as needed (the pan can get very hot during the second batch). Place cooked pancakes under an inverted bowl to keep warm. Serve immediately with maple syrup.
