  • 1/2 rustic baguette (8th slices)
  • 2 large ripe tomatoes (1 A book)
  • 2 large garlic cloves, peeled and halved
  • olive oil
  • Kosher salt

  1. Grill or toast bread: Cut the bread into 1/2-inch slices, cut diagonally. Place the slices on a baking sheet. Drizzle olive oil over each slice, followed by a pinch of kosher salt. Grill or broil bread on high heat until toasted and crisp, about 2 to 3 minutes per side. (You can use a toaster oven for a faster method.)
  2. Grate the tomato: Meanwhile, use the large holes of a box grater to grate the tomatoes into a bowl and discard the skin (you’ll get about 1 cup of pups). Season the grated tomatoes with ¼ teaspoon kosher salt or more to taste.
  3. Surcharge: When the bread is cooked, rub each piece of bread with the chopped side of the garlic (this will give the toast plenty of garlic flavor). Put the tomato paste on each slice. Drizzle with olive oil and serve immediately. Bread gets soggy after a few minutes, so top with tomatoes just before serving.
