Why Make Oven Roasted Corn On The Cob?

So why bake corn on the cob? Well, a couple of reasons. Maybe you don’t want to turn on the grill (Alex is the grill master here, and I’m not very good with charcoal on my own). Or maybe not! Or maybe you don’t want to fiddle with a pot of boiling water while you prepare the rest of a meal. Do you want to “set and forget”? Oven-roasted corn on the cob is where it’s at.

Here are a few more things about the method: You can roast corn on the cob in the oven with the husk (with or without foil) or the husk. We found that the dissect method was the best for several reasons:

  • Super wet! Frying without the skin gives a caramelized flavor but also dries out a bit. Roasting with the husk gives a nice chewy corn on the cob.
  • No prep time! The method is also very simple: no prep time is required since you don’t have to shell the corn before putting it in the oven.

Are you convinced? (We are!) Here’s our easy method for baking corn on the cob in the oven (see below for the full recipe):

  • Preheat oven to 350 degrees.
  • Use kitchen scissors to trim excess silk from each cob.
  • Place the corn on the cob directly on the grid and roast for 35 minutes. Remove the corn and let it cool for a few minutes before peeling.

That’s how you season!

And that’s it! No, you can flavor your corn however you like. We like butter, kosher salt, and a bunch of freshly ground pepper. Or, if you want to go fancy, we have a few options.

  • paprika or smoked paprika.
  • parmesan and herbs.
  • Old Bay. Use store-bought or homemade.
  • Mexican street corn (elot). Our favorite! Try Mexican street corn with a creamy and flavorful sauce, sprinkled with cheese, lime and cilantro.
  • Ranch. Try this ranch seasoning on corn: it’s surprisingly good!
  • Greek spice. The Greek seasoning contains basil, oregano, and garlic powder: it’s perfect for sprinkling on a cob.

  1. Preheat an oven to 350 degrees Fahrenheit.
  2. Using a knife or kitchen shears, trim the excess corn silk from each cob. Remove all outer shell parts.
  3. Place the cobs with the shells directly on the oven racks, spreading evenly. Bake 35 minutes.
  4. Remove the corn from the oven and let it cool slightly before removing the husks. Season to taste (we like butter or olive oil, kosher salt, and freshly ground pepper).
