  • 1 fresh lemon
  • 1 clove of garlic
  • Dijon mustard

Here’s a little trick for this Niçoise vinaigrette that boosts the lemon flavor: and you’ll want to make it this way every time. Here are the tips:

  • Mix together the lemon juice, garlic and Dijon mustard. Dijon mustard adds great flavor while helping create a creamy emulsion.
  • Whisk together the olive oil gradually. For the perfect emulsion, whisk in the olive oil, 1 tablespoon at a time. The resulting lemon vinaigrette is so flavorful and delicious you’ll want to add it to every salad you make.

  • 3 tablespoons lemon juice
  • 1½ tablespoons Dijon mustard
  • 1 small clove of garlic, chopped
  • 6 tablespoons olive oil
  • ¼ teaspoon kosher salt
  • Serve with: Classic Nicoise salad

  1. In a medium bowl, whisk together lemon juice, Dijon mustard, minced garlic, and kosher salt.
  2. Gradually whisk in olive oil, 1 tablespoon at a time, until creamy and emulsified. Season with additional salt if desired (or add ½ tsp dried oregano for an herbal twist). Serve with a classic Nicoise salad.
