Please tell us, are you a mushroom lover? When Alex and I drove to Big Sur, California last year, we had an amazing mushroom pizza with a gorgeous mountain view. And it was so good we knew we had to recreate a version for our blog! Our version of this pizza is very different from the original, but it tastes amazing: and looks just like the one we had there! It’s a white pizza – meaning no tomato sauce – and of course we couldn’t resist adding a few dollops of tangy goat cheese. Read on for the recipe and all our secrets to the best mushroom pizza!

How To Become A Mushroom Lover (Step By Step!)

Let’s start talking about mushrooms. I used to be an avid mushroom hater. Yeah, I didn’t give them a chance until I was in my twenties. But I decided to give the huge meaty portobellos a shot. After that, I gradually snowed to eat everything mushroom recipes. I’ve since learned that these mushrooms are essential for adding a savory and meaty umami flavor to recipes. Now I’m officially an avid mushroom fan! (Oh, and also a big fan of truffles! Try this truffle pizza to impress. Or the truffle fries…)

What mushrooms on pizza?

Now, what kind of mushrooms go on pizza? Literally any kind of Costs Mushroom will work here, but not canned. Here are some notes to add to good ones:

  • Use fresh mushrooms, mixed varieties if desired. This recipe uses a mix of fresh mushrooms for textural contrast. We typically use whatever our local grocery store stocks or source from our farmers market. This mushroom pizza is made with a mix of baby bella (aka cremini) and shiitake mushrooms, but feel free to try oyster mushrooms, portobello strips, or white button too.
  • Do not use canned food! What kind of mushroom shouldn’t go on pizza? cans. These slimy mushrooms in a box have caused my 20+ year irrational dislike. Absolutely not recommended for pizzas!
  • Do not use raw! Can raw mushrooms be used on pizza? Definitely not. When placed in a hot oven, they dry out and shrink at high temperatures. To eat mushrooms on pizza, first fry them. This recipe calls for sautéing them with fresh herbs and adding a squeeze of lemon juice at the end. It’s heavenly!

Tips for making mushroom pizza

This mushroom pizza is a white pizza, which means there is no tomato sauce! Of course you can use tomato sauce if you want: because who will mind! Our Easy Pizza Sauce is our tried and tested method for an Italian pizza sauce that will literally blow your mind. (I promise!) But if you like the white pizza idea, it’s even easier! Here are some tips about this mushroom pizza:

  • Do you need white sauce for white pizza? Not necessarily. Traditionally, an Italian white pizza is really anything but tomato sauce, so let’s start ours by brushing the crust with olive oil. Then just add the cheese and toppings!
  • Always cook the mushrooms before topping a pizza! As a result, they are perfectly juicy and do not dry out. These mushrooms are thinly sliced ​​and sautéed with some freshly chopped herbs, then drizzled with a little lemon juice.
  • Add goat cheese for smoothness. Top this crust with mozzarella cheese and mushrooms, dollops of tangy goat cheese (a must), and a few extra fresh herbs, and you have an incredibly flavorful pizza that will wow your friends and family.

This mushroom pizza recipe uses a handful of fresh herbs – and they’re so much more fun to grow yourself! We grow herbs all summer long and one of the most satisfying things is just walking around the garden and picking some herbs. You don’t even need space in the garden: you can easily grow herbs in pots as long as you have a sunny Sims! And adding herbs to your cooking is a healthy flavor addition without adding calories.

For this recipe we used a mixture of Thyme, oregano and chives: but you can use whatever you want. Basil would be a natural option, of course: even a small amount of chopped rosemary! This mushroom pizza is a white pizza topped with mozzarella cheese, goat cheese and fresh herbs. It’s perfect !


  • 1 Scoop Best Pizza Dough (or food processor dough or thin crust dough)
  • 1 ½ cups sliced ​​mixed mushrooms (e.g. baby bella aka cremini, button, shiitake and oyster)
  • 1 tbsp every finely chopped fresh thyme and oregano, plus additional sprigs for garnish
  • ¼ teaspoon plus 1 pinch of kosher salt, divided
  • 1 tbsp Olive oil, plus more for drizzling
  • 1 tbsp fresh lemon juice
  • 1 at 2 ounces goat cheese, crumbled
  • ¾ cup grated mozzarella cheese
  • 1 at 2 finely chopped chives
  • Semolina flour or corn flour for dusting the pizza skin

  1. Prepare pizza dough: Follow the Best Pizza Dough recipe to prepare the dough. (It takes about 15 minutes and 45 minutes to rest.)
  2. Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven (this is the pizza oven we use).
  3. Preparation of the toppings: Clean the mushrooms and cut them in slices. In a skillet or skillet, heat 1 tablespoon olive oil over medium-high heat. Add mushrooms, chopped herbs, and ¼ teaspoon Kosher salt and cook, stirring occasionally, about 5 minutes. When the mushrooms are soft, reduce the heat to minimum and add the lemon juice. Remove from fire.
  4. Bake pizza: When the oven is done, dust a pizza peel with corn or semolina flour. (If you don’t have a pizza peel, you can use a rimmed baking sheet or the back of a rimmed baking sheet. But a pizza peel is worth the investment!) Roll out the dough in a circle; For instructions, see How to stretch pizza dough. Then carefully place the dough on the pizza peel.
  5. Brush a thin layer of olive oil over the crust. Then top with mozzarella in an even layer, then with cooked mushrooms and crumbled goat cheese. Garnish with chopped chives and additional sprigs of thyme. Sprinkle with 1 pinch of kosher salt.
  6. Use the pizza peel to carefully transfer the pizza onto the preheated pizza stone. Bake the pizza until the cheese and crust are golden brown, about 5 to 7 minutes in the oven (or 1 minute in a pizza oven). Cut into pieces and serve immediately.
