With a little magic in the kitchen, tofu turns into a creamy vegan pudding! This mint chocolate tofu pudding is a decadent tasting dessert for eaters of all kinds.

Alex and I love trying healthy desserts. Even if we sometimes don’t know how to use the words “healthy” and “natural” exactly, they at least mean trying to think outside the box! In this case, that means gluten-free, vegan, and refined sugar-free: but it works for eaters of all kinds! This is one of those foods that’s better left out of the box – pudding! And this Mint Chocolate Tofu Pudding couldn’t be more delicious or easier to make at home. Read on for the recipe!

How to make tofu pudding

Our friend and taste tester for this tofu pudding was a bit suspicious at first. Tofu pudding? Sounds a bit strange, we know. But after trying it, the first bite won her over!

It’s really easy to make this tofu chocolate mint pudding: it only takes 5 minutes of manual labor. The most important thing when buying ingredients is to make sure you’re taking one soft (not firm) tofu! The soft tofu gives the creamy texture; Firm tofu is what you would use if you were cooking something like a stir fry (or these tofu tacos). Once you have your soft tofu, all you need is cocoa powder, maple syrup, and mint extract. These are ingredients that are always on hand in our pantry, and we’re guessing they’re in yours too! Place them in the food processor for a few minutes. The resulting texture will look like pudding!

The final step in making this tofu pudding is to chill it well. After blending, you will find that the texture is quite runny. Pour into glasses or bowls and refrigerate for at least 30 minutes to set. Once set, the texture is more like a mousse or pudding.

Is tofu healthy?

From what we’ve read, the problem is over-reliance on processed soy for protein in a vegetarian or vegan diet. It is recommended to use organic tofu (or non-GMO tofu) whenever possible.   • 2 12-ounce packet of silken tofu (non-GMO or organic if possible)
  • ½ cup cocoa powder
  • ½ cup maple syrup
  • ¼ teaspoon mint extract
  • 1 pinch of kosher salt
  • mint leaves for garnish (optional)

  1. Drain the tofu. In a food processor or blender, mix all the ingredients.
  2. Pour the pudding into bowls or glasses and chill 30 minutes before serving. (This is an important step for the flavors to blend and the pudding to thicken.)
