Looking for something to beat the heat? Temperatures are rising here in Indiana. We whipped up an ice cream the other night and it hit the spot! Unlike a typical ice cream, this version is made with coconut milk. This means it’s vegan and quick and easy to make as there’s no need to heat custard on the stovetop. It’s also naturally sweetened with agave syrup (although adding chocolate negates the natural sweetness a bit!). Why vegan ice cream?

Neither Alex nor I eat strictly vegan/vegan. You may be wondering why vegan ice cream? But since there are many traditional ice cream recipes out there, we take on the challenge of experimenting with making delicious dairy-free ice cream. Plus, it suits my stomach better than the dairy version. And for us, vegan ice cream is as good as the original! We have a few other vegan ice cream flavors: Jamocha Almond Fudge, Salted Chocolate Pistachio, and Straight Dark Chocolate, but we decided we needed one more. And this is my childhood favorite: Mint Chocolate Chips! For years this was the only variety I ordered.

How to make vegan ice cream

The secret to this vegan ice cream with mint chips is…whole coconut milk! And in this case, the chocolate-mint flavor coats it so it’s not too coconuty, just rich and refreshing. Cornstarch also helps add body to vegan ice cream. And boiling the mixture until thick and using a liquid sweetener like agave or maple syrup will also help achieve a creamy texture. And the taste? As I noted, while this version is made from coconut, it’s not too coconut-y. Mint helps balance it out. And you end up with a really, really good vegan mint chocolate ice cream!

What is the best ice cream maker? Alex and I use this 2 liter ice machine and I love it: it makes a great holiday or birthday gift if you’re on a budget. Stirring the ice cream takes about 15 minutes. Once done, you can eat your ice cream right away for a fluffy texture. Or follow the recipe instructions below to freeze it into a hard ice cream texture: It takes about 4 hours to freeze!

  • 2 15-ounce cans of whole coconut milk
  • 2 tablespoons cornstarch
  • ½ cup agave syrup
  • 1 teaspoon Vanilla
  • 2 teaspoons peppermint extract
  • pinch of kosher salt
  • 2 ounces vegan dark chocolate

  1. Freeze the ice maker base overnight.
  2. In a small bowl, combine ½ cup coconut milk with 2 tablespoons cornstarch and set aside.
  3. Place the remaining coconut milk in a medium saucepan. Heat the coconut milk over medium-low heat for a minute or two, stirring to incorporate the solids. Then add the agave syrup. Whisk together the cornstarch mixture. Heat until mixture thickens (do not boil), 6 to 8 minutes. Remove from heat and stir in vanilla and peppermint extract.
  4. Strain through a fine mesh strainer into a 1 gallon ziplock bag. If stirring immediately, place the bag in an ice bath for 30 minutes until cool; If you’re stirring the next day, refrigerate for 4 hours or overnight (in either case, the mixture should be as cold as possible before stirring).
  5. Stir the ice cream in the ice cream maker until it takes on the consistency of soft serve. Meanwhile, chop the mint chocolate. Place in ice cream maker over the last 2 minutes or so.
  6. For a soft texture or for a hard ice cream, eat immediately, freeze according to the following instructions: Press a piece of parchment paper or wax paper into an airtight container, then use a spatula to scrape the ice cream into the container, being careful not to scrape off any frozen parts up the edges of the ice machine base. Freeze for 4 hours for a hard ice cream texture.
