Sandwiches can be anything but boring: Especially when they are, in the truest sense of the word calculated with delicious herbal ingredients. How to make a vegetarian Mediterranean sandwich
This vegetarian Mediterranean sandwich is a delicious and impressive meal when you’re in a hurry. Here are the keys to an excellent vegetarian Mediterranean sandwich:
- Use good bread. For this sandwich we used an artisanal multigrain bread from our local grocery store. You can use any bread you like, but crusty artisan bread is delicious.
- Any creamy spread will do. It really could be called a hummus sandwich! Use any hummus dip you like, like our classic homemade hummus or our white bean dip. Or if you’re in a hurry, just use store-bought hummus.
- Grate those carrots! Carrots are a nice addition to the color of this Mediterranean vegetable sandwich. If you use them, a portable julienne shredder like this one we have makes it really easy.
- green green green. We used pea sprouts for the green element, but you can use any type of spring greens or even microgreens.
- Feta for the win! If you eat dairy, feta cheese really brings this sandwich to the edge! But omit the cheese to make a vegan sandwich and add Kalamata olives instead.
Upgrade your sandwich
Of course, you can fill this Mediterranean veggie sandwich with whatever you like! A few ideas for you: These bright pink pickled red onions bring another zesty element. Or to keep the Mediterranean theme, you can add Kalamata olives or sun-dried tomatoes. You can even coat the bread slices with pesto before spreading them on the hummus.
If you’re home during lunch, toasting the bread gives the sandwich a fantastic crunch. If you’re really hungry, adding a fried egg or chopped hard-boiled eggs is really enough.
