  • 1 red peppers, finely diced
  • 1 small shallot, chopped
  • 1 cup chopped English cucumber (or regular cucumber, peeled)
  • 2 5-ounce cans of albacore tuna
  • 3 tablespoons capers, drained
  • 2 tablespoons white wine vinegar
  • 1 tbsp olive oil
  • 1 tbsp Dijon mustard
  • ¼ teaspoon kosher salt
  • 2 tablespoons crumbled feta cheese (optional)
