Try our new favorite 30-minute recipe: this Tropical Mango Quinoa Bowl! Healthy bowls are not only incredibly delicious, they’re beautiful and easy to make: triple the danger of overnight cooking! Mangoes weren’t always part of Alex and my nighttime repertoire. But we’ve practiced cutting them out and incorporating them into our simple eating routine. This recipe is one of the tastiest ways we’ve tried so far.

How to make a mango quinoa bowl

Here’s how to make a Tropical Mango Quinoa Bowl! This recipe is vegan and gluten-free and gorgeous with all the colorful veggies! Here’s what to do:

Quinoa Bowl Recipes are so easy to make: this one can be made in just about 30 minutes. Alex and I made these bowls for my parents and both loved the fresh flavors. My mom especially liked the vegan cashew sauce and liked that she added extra protein to the dish since it was made with cashews. Watch the video below to see how it’s done!

Nutritional values ​​of the mango

Did you know that there are six varieties of mangoes in the United States? Below is a small table we made to show some of the more common strains! For this recipe we recommend the Francois Mango.

Some fun facts about Mango Francis:

  • When ripe (see how to pick a perfectly ripe mango!), the skin will turn from green to yellow and be soft to the touch.
  • It has a rich, sweet and complex taste.
  • It grows on small farms across Haiti and is available from April to June.
  • Like all mangoes, the Francis mango is very high in vitamin C and is also a good source of vitamin A and fiber. A cup of diced mango provides 100% of your daily vitamin C intake.

This mango quinoa bowl is quick and delicious, drizzled with a tangy vegan cashew sauce. Healthy bowl recipes make dinner quick and easy!


For the bowl of quinoa

  • 1 ½ cups Andean millet
  • ½ teaspoon kosher salt
  • 3 at 4 Franz Mangos
  • 1 Lawyer
  • 1 Red pepper
  • 1/2 small red cabbage
  • 8 cups mixed green
  • Cashew nuts for garnish
  • Fresh coriander for garnish (optional)

For the citrus fillet

  • ½ cup raw cashew nuts
  • 1 teaspoon chopped ginger
  • ½ cup orange juice (1 big orange)
  • 1 tbsp lime juice
  • ¼ teaspoon kosher salt

  1. Place the cashews in a bowl and soak while you prepare the recipe, or for at least 20 minutes.
  2. Cook the quinoa (or use our Instant Pot Quinoa Method): Using a colander, rinse the quinoa under cold running water and drain completely. Place quinoa in a saucepan with 3 cups of water. Bring to a boil, then reduce the heat to low. Stir once, then simmer, where the water is bubbling, until the water is completely absorbed (check by removing the quinoa with a fork to see if there is any water left), about 17-20 minutes. Remove from heat, cover the pan and let the quinoa steam for 5 minutes, then fluff the quinoa with a fork. Stir in ½ teaspoon kosher salt.
  3. Meanwhile, dice the mango. Chop the avocado. Dice peppers. Grate the cabbage.
  4. When the quinoa is cooked, drain the cashews. Peel and chop the ginger. In the bowl of a high-speed blender, combine cashews, ginger, orange juice, lime juice, and kosher salt. Blend until mixture is completely smooth. Gradually add more water if needed. Taste and add more salt or lime juice to taste.
  5. To serve, place the quinoa and greens in a bowl and arrange the greens and mango on top. Sprinkle with the cashews and chopped cilantro, and drizzle generously with the vinaigrette (make sure you use enough to flavor the entire bowl; the vinaigrette provides extra protein, too!).
