How to make quinoa taco filling

Now for the quinoa tacos! Alex and I created this vegetarian taco recipe as a quick and easy dinner idea. To prepare the quinoa taco filling, follow these steps:

  • Prepare quinoa! (Watch the video.)
  • Fry it in coconut oil with taco seasoning for a few minutes. Our secret blend: cumin, paprika, garlic powder, onion powder and oregano.
  • Add fresh lime juice and green onions. It turns everyday quinoa into a delicious taco filling!

Top your tacos!

After the filling, get creative with your taco fillings! There is an art to garnishing a taco to ensure there is contrast in texture, flavor and color. Here are some tips for topping these quinoa tacos:

  • Be sure to use a creamy sauce. It’s a must-have with these quinoa tacos because without it, the filling is too dry. Here we used a quick and easy flavorful sour cream. You can also use Mexican cream.
  • Add fresh, crispy coleslaw. The quick pepper salad below is tangy and crunchy, a nice cool contrast.
  • The salsa is a must. Use store-bought or homemade salsa fresca.
  • add style. Salty feta crumbs add a pop. The icing on the cake? Pickled onions. Make them ahead of time or the night before. They’re optional, but they add extra flavor and spiciness.

Two ways to make quinoa taste better

In the video above, we share two ways to make quinoa taste better. Alex and I found a few ways to improve our Perfect Quinoa method so it tastes even better. Here’s what we do:

  • Grill quinoa. Toasting quinoa in a dry skillet before cooking gives quinoa a unique nutty flavor!
  • Use vegetable broth. Instead of using water to cook your quinoa, use vegetable broth instead! It delivers a bold, savory note without the extra time or effort.

These Loaded Quinoa Tacos are a delicious veggie taco recipe with quinoa taco filling, pepper salad, spicy sour cream, and feta!


  • 1 cup Just organic quinoa
  • 2 cups Simply Nature organic vegetable broth
  • 3 tablespoons Simply natural organic coconut oil
  • 1 tbsp every: cumin and paprika
  • 1 teaspoon every: garlic powder, onion powder and oregano
  • ½ teaspoon kosher salt, shared
  • 2 Green Onions
  • 1 lime
  • 1 Peppers (we have 1/2 Red and 1/2 orange)
  • 4 cups Simply Nature organic spring mix
  • Salsa, store bought or salsa fresca
  • Sour cream, spicy mayonnaise or cashew cream
  • Crumbled feta cheese (omit for vegans)
  • Pickled red onions, pickled radishes, or pickled jalapenos (optional, prepared ahead of time)
  • ten at 12 Corn tortillas

  1. Cook quinoa: In a dry skillet over medium heat add the dry quinoa and grill over medium heat, stirring frequently. After a few minutes you will hear a crack; Continue stirring until the quinoa begins to brown and smell toasty, about 3 to 4 minutes total.
  2. Immediately place the quinoa in a fine mesh strainer and rinse in the sink. Return to the pan and add the vegetable stock and ¼ teaspoon kosher salt. Bring to a boil, then reduce the heat to low. Cover the pan and let it simmer where the broth is bubbling, about 15-20 minutes, until the broth is completely absorbed. (Check by removing the quinoa with a fork to see if there is any broth left.) Turn off the heat and let it simmer with the lid on for 5 minutes, then stir the quinoa with a fork .
  3. Preparation of the toppings*: While the quinoa is cooking, quickly prepare a pepper salad: thinly slice the peppers, then cut in half. Place in a bowl and toss with 1 tablespoon lime juice and a few pinches of kosher salt and set aside until ready to serve. If you’re serving it with flavorful sour cream, add a few hot sauce shakes to taste (or do the same with hummus for a vegan option).
  4. Finish the quinoa taco filling: When the quinoa is done, melt the coconut oil in a large non-stick skillet over medium-high heat. Add cooked quinoa and stir. Add cumin, paprika powder, garlic powder, onion powder, oregano and ¼ teaspoon kosher salt and stir. Then cook without stirring for about 5 minutes or until the bottom starts to crisp. Remove from the heat and stir in 1 tablespoon of lime juice and the spring onions. (Add the remaining lime juice to the pepper salad.)
  5. Serve Quinoa Tacos: Warm tortillas** or char by placing one tortilla over an open gas flame over medium-high heat for a few seconds on each side, turning with tongs until slightly charred and hot. Top the tortillas with veggies, quinoa filling, peppers, pickled onions, sour cream (mixed with a little hot sauce if desired), and crumbled feta. Serve immediately. Serve with chilled black beans on the side, if desired.
