Summer is here! Temperatures are creeping back into the 90’s and our mint patch is starting to go wild. What better way to beat the heat than with a lemonade slush recipe? This tangy drink is all you need to keep you refreshed. It’s glazed with the best sweet torte, citrus flavor and a hint of fresh mint. If you like, make it into a cocktail by adding gin. Either way, it’s irresistible!

How to make this lemonade slushie recipe

This lemonade slushie or lemon slush recipe is an ice-cold version of lemonade that also includes aromatic mint. This one is of course sweetened with honey or maple syrup, but you can use sugar if you prefer. Enriching the blend with mint adds just the right amount of complexity.

How do you make a lemonade slushie? The hard part is extracting the juice from the lemons… and waiting for the mixture to freeze! Here’s what to do:

  • Squeeze lemons: You will need 1 cup of freshly squeezed lemon juice, which is about 6 lemons. We advise you not to use bottled lemon juice here: for a better taste, opt for the real one! We haven’t found a brand of bottled lemon juice that tastes like fresh lemon juice yet.
  • Simmer with sweetener and mint. After squeezing all the lemons, simmer the juice with maple syrup or honey, then turn off the heat and add mint leaves. Leave for 10 minutes: This allows the mint flavor to penetrate the liquid.
  • Freeze in ice cube trays. After 10 minutes they are combined with more cold water and frozen in ice cubes. Freezing in cubes takes about 6 hours, so make this recipe the day before.

Serve this lemonade slushie

When ready to serve, puree your lemonade cubes in a blender with just enough water and you have an instant lemonade slushie! You can drink it as it is for a soft drink.

  • 1 cup freshly squeezed lemon juice (approx. 6 Lemons)
  • ½ cup maple syrup or honey (or granulated sugar)
  • 3 cups water shared
  • 1 a handful of fresh mint
  • ½ cup gin (optional)

  1. Squeeze the lemons. In a small saucepan, heat lemon juice, honey and ½ cup water. Stir to dissolve maple syrup or honey. When the mixture is simmering, turn off the heat and add a large handful of mint leaves. Leave for 10 minutes. Remove the mint leaves and add 2 ½ cups of cold water. Pour into ice cube trays and freeze (liquid fills about 2 ½ cups) – about 6 hours or overnight.
  2. Just before serving, place the lemon ice cubes in a blender with the gin (optional) and puree. Add just enough water to melt (about 1 cup or more without gin). Serve immediately.
