That’s an understatement because seared scallops taste like hell. surprised ourselves. We created this sauce recipe to accompany our seared scallops method. Honestly, we usually start making this sauce after we sear it. This post has all of the information on our main method… and this one just breaks down the sauce component. Ingredients for this scallop sauce

This scallop sauce has only 4 ingredients that pack a huge flavor. If you could combine them in one name, we’d call them Lemon Garlic Herb Butter. But since it’s a bit intense, we decided on the herb-lemon sauce. Here’s what you’ll find in this flavorful sauce:

  • Salted butter: Salted brings the best salty taste; You can also use unsalted and add a few pinches of salt
  • lemon juice: Fees only! Don’t even think about using bottled lemon juice
  • Garlic: Fees only! Again, no pot garlic or garlic powder

Which herbs go well with scallops?

There are many fresh herbs that pair well with this seafood, but some are more natural choices than others. For this scallop sauce, you can use the easiest-to-find fresh herbs. Here are the top herbs that go well with scallops:

  • Thyme: The subtle thyme flavor and French ambiance make it the best choice for scallops.
  • Tarragon: It has a subtle liquorice undertone and a fresh taste. It’s harder to find but worth it.
  • Parsley (Italian or flat leaf): The fresh bite of parsley is another natural choice.
  • Chives: The fine onion and garlic flavor comes into its own here.
  • Basil: The fresh, peppery flavor of basil also pairs well with scallops.

  • Use fresh or frozen scallops.
  • Salt the scallops in a solution of water and salt for 10 minutes. This refreshes the taste and flavors the inside of the scallops. (We use this trick with our baked salmon as well.)
  • Use a large metal or cast iron skillet. Don’t use anti-stick: it won’t turn brown either!
  • Dry the scallops before cooking. Any extra moisture will prevent browning.
  • Cook without touching for 2 to 3 minutes, then flip and start over. Don’t move the scallops in the pan! Keeping them in one place creates the crispy brown surface.

Prepare the sauce for the scallops right after searing them!

Once you’ve seared the scallops, remove them from the pan and set them aside while you prepare the sauce. Here are some tips to keep in mind when preparing the sauce:

  • 1 to 2 minutes cooking time is enough! You will simply melt the butter and let the herbs steep.
  • Scrape the bottom with a spatula to release the golden pieces. All those nicely browned chunks of scallop are incorporated right into the sauce. So don’t even think about taking them out of the pan!
  • Serve immediately. Then add the scallops and serve. The amount of flavor it infuses is unreal!

Here’s how to make an easy sauce for scallops! This Lemon Herb Butter is a quick stir-fry sauce that adds a taste from heaven to seafood. This sauce is enough for 1 pound of scallops.


  • 2 tablespoons Salted butter
  • 2 tablespoons lemon juice
  • 1 Garlic clove, chopped
  • 2 tablespoons chopped fresh herbs (tarragon, thyme, parsley etc.)

  1. Sear the scallops according to seared scallop directions.
  2. Remove the scallops from the pan onto a plate and reduce the heat to medium. Add butter, lemon juice, chopped garlic and chopped herbs. Scrape the bottom of the pan with a spatula to loosen the flavor from the browned bits stuck to the pan. Cook 1 minute until fragrant.
  3. Reduce the heat to a minimum. Add the scallops and brush with the sauce. Then remove from the heat and serve immediately.
