Here’s one way to avoid the white stuff in this Lemon Garlic Salmon: Salt the salmon first! It also keeps the fish perfectly moist and helps the salmon come back to room temperature, allowing it to cook more evenly. Here’s what to do:

  • Prepare a saline solution. Mix 4 cups of water and 3 tablespoons of salt to make a brine solution.
  • Put the fish in the water for 15 minutes. Just put the fish in the water for 15 minutes. You can do it in time to preheat your oven: no time wasted!

  • Garlic
  • lemon juice and zest
  • Salt
  • Parsely

Simply heat the garlic in the butter for 1 minute, then add the lemon, salt and parsley. As simple as that! It adds tremendous flavor and you can use it on any type of fish or chicken.

This Lemon Garlic Salmon is loaded with flavor! Cook until tender and drizzle with a rich and flavorful lemon butter sauce.


  • 4 (6 ounces) salmon fillets
  • ½ teaspoon kosher salt, plus more for the brine
  • Freshly ground black pepper
  • 1 Garlic clove, chopped
  • 1 tbsp finely chopped parsley
  • 2 tablespoons lemon juice, plus zest of half a lemon (plus additional slices for garnish, if desired)
  • 4 tablespoons Salted butter
  • 2 pinches of kosher salt

  1. Preheat: Preheat the oven to 325 degrees Fahrenheit.
  2. Salt the salmon: While the oven is preheating, in a shallow bowl, combine 4 cups of room temperature water and 3 tablespoons of Kosher salt. Place the salmon in the water and wait 15 minutes (this should be about the time it takes to preheat).
  3. Wrap the salmon in foil*: Place a large piece of aluminum foil on a baking sheet and brush with olive oil. Dry each piece of salmon and then place it on the foil. Sprinkle salmon with kosher salt on each fillet and freshly ground pepper. Close and seal the foil around the salmon.
  4. Bake: Bake the salmon in the foil for 10 minutes. Then, open the foil pack to allow the steam to escape and cook again until tender and pink in the center (temperature should be between 125-130 F in the middle) for 3-6 minutes depending on thickness. A 1 inch (2.5 cm) thick fillet should cook in about 15 minutes total.
  5. In the meantime prepare the sauce: Chop the garlic and finely chop the parsley. Grate and squeeze the lemon. Melt the butter in a saucepan or skillet over low heat. Once melted, add the minced garlic and cook until fragrant (keep the heat low and don’t let it brown!), about 1 minute. Remove from fire. Stir in lemon juice, zest, and kosher salt.
  6. Surcharge: Serve the salmon immediately and drizzle with the lemon-garlic sauce. Leftovers can be stored in the refrigerator for 3 days.
