It is an intensely flavored butter sauce intended to be used in small batches, e.g. B. to sprinkle over seafood, chicken or even roasted vegetables. Don’t use it as a traditional sauce: a little is enough! Here are the 5 ingredients you need:

  • The best way to peel a lemon? Our best bet is a microplane, or use the small holes on a crate grater. Holding the Microplane in one hand, place one end on a flat surface and hold it at an angle. Hold the lemon in the other hand and slide it down over the holes in the microplane. The most important part for both methods: only rub the yellow part of the skin, not the white skin! The pulp has a bitter taste.
  • Use low heat and only heat the garlic for 1 minute. You don’t want to saute the garlic, you’ll just let the flavor infuse into the butter. When it just smells, it’s done! Take it off the stove and you’re good to go.

  • 4 tablespoons Salted butter
  • 1 Garlic clove, chopped
  • 2 tablespoons lemon juice, plus the zest of half a lemon
  • 2 pinches of kosher salt
  • 1 tbsp finely chopped parsley

  1. Chop the garlic and finely chop the parsley. Grate the lemon, then squeeze it.
  2. Melt the butter in a saucepan or skillet over low heat.
  3. Once melted, add the minced garlic and cook until fragrant (keep the heat low and don’t let it brown!), about 1 minute. Remove from fire. Stir in lemon juice, zest, and kosher salt. Serve immediately as a fillet on salmon, white fish, shrimp or chicken: a little goes a long way. (Keep leftovers in an airtight container in the fridge and reheat on stovetop before serving. Note that the parsley will lose its light green color; you can add more chopped fresh parsley when serving.)
