Do you have a kohlrabi bulb and don’t know what to do with it? This unique vegetable looks a bit like an alien, and if you’re anything like us, you were at a loss how to use it the first time. Here’s a perfect way to showcase the raw, crunchy texture of this vegetable: Kohlrabi coleslaw! It’s crisp, crunchy and flavorful accompanied by tart apple, sweet carrot and a Mediterranean dressing. It’s our preferred way of using it: no exceptions.

What is kohlrabi anyway?

Kohlrabi, also known as German turnip, is a cruciferous vegetable. It’s related to cabbage, broccoli, cauliflower, and kale, so it’s no surprise that it tastes like broccoli stalks! It comes in green and purple varieties and is easiest to find at farmers markets, although you can also find it at regular grocery stores.

Kohlrabi can come with the leaves attached, or they can be pre-cut (as shown in this photo). You can save the veggies for salads or finely chop them up to use in this coleslaw if you like!

The texture of kohlrabi is crunchy and moisturizing: its texture and taste are similar to jicama. Therefore, in our opinion, it is best served raw! This kohlrabi salad shows off its superpowers in a simple way: serve thinly in matchsticks with carrots and apples with a savory vinaigrette-style dressing. Here’s what you need:

  • Kohlrabi
  • carrots
  • Apple
  • Green Onions
  • Parsely
  • olive oil
  • white wine vinegar
  • maple syrup, honey or sugar
  • Dijon mustard

Some tips for cutting matchsticks

The most time consuming part of this recipe? Cut the kohlrabi! It takes a while to cut matches, so be patient! Here are the main steps to cutting kohlrabi:

  • Remove any clinging greens. Sometimes turnip greens are sold with the vegetables; sometimes it’s just the lightbulb.
  • Peel the onion. You can cut extras when you cut matches so they are not perfect.
  • Cut into thin slices, then set the slices aside and cut into thin sticks. Then trim the ends to remove more skin.

This Kohlrabi Salad recipe is light, crunchy, and flavorful! It’s one of the best ways to eat this unique vegetable.


  • 3 cups Kohlrabi (approx. 3/4 pounds), peeled and cut into matchsticks
  • 1 cup carrots (approx 2 large carrots), julienned or grated
  • 1 Apple cut into matchsticks
  • 2 Spring onions, thinly sliced
  • 2 tablespoons chopped parsley
  • 2 tablespoons olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp maple syrup, honey or sugar
  • ½ tbsp Dijon mustard
  • ½ teaspoon kosher salt

  1. Remove any greens that are sticking to the kohlrabi. Chop the kohlrabi, carrots, apple, spring onion and parsley as above.
  2. In a bowl, combine olive oil, white wine vinegar, maple syrup, Dijon mustard, and kosher salt. Enjoy immediately or refrigerate for 1-2 days.
