  • 1 Pounds of short pasta (clams, macaroni, penne, etc.)*
  • 1 teaspoon kosher salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 8 ounces (2 cups) sharp cheddar cheese (unripened), grated
  • 8 ounces (2 cups) Monterey Jack cheese, grated
  • 1 at 1 1/2 cups 2% milk
  • ½ cup seasoned Italian breadcrumbs (or plain breadcrumbs, optional)

  1. Place the dry noodles in the Instant Pot and stir in 4 cups of water and the kosher salt, onion powder, and garlic powder. Lock the Instant Pot lid. Place the pressure relief (vent) handle in the “seal” position.
  2. Cook at high pressure for 4 minutes: Press the pressure cook button, make sure the ‘high pressure’ setting is selected and set the time. Note that it takes about 10 minutes for the pan to “preheat” and build pressure before you start cooking. (Avoid touching the metal part of the lid during cooking.)
  3. Fast Release: Release any remaining steam from the Instant Pot by setting the pressure release handle to “Vent” and covering your hand with a heated towel or pad. Never put your hands or face near the opening when dispensing steam. Open the lid of the pressure cooker. There will be some water left, which is expected.
  4. Cook slowly and prepare the sauce: Switch the Instant Pot to the “Slow Cook” setting. Mix the pasta, then stir in the grated cheese. Add the milk and continue to stir for a minute or two until the cheese melts into a creamy sauce. Add more milk if needed. Serve hot, sprinkle with breadcrumbs.

Remarks

*Variation on the stovetop: Cook pasta al dente in boiling water. Drain and put back in the pot. Add the remaining ingredients and heat over low heat until the cheese melts and a creamy sauce forms.
