This isn’t your mom’s green bean casserole. No, this is a new spin made from scratch. It contains tender and crunchy green beans and real mushrooms. The creamy sauce coats each of the beans but isn’t sticky. And it has a new take on the traditional fried onion filling! I first discovered green bean casserole when I moved to Indiana 15 years ago. While it wasn’t my tradition growing up, I loved this flavorful dish… but I’ve always wanted to make a “from scratch” version of it. That’s why we bring you our updated version of our holiday favorite from the pressure cooker!

A gourmet version of the green bean casserole

Did you know that green bean casserole was an invention of Campbell’s Soup? (I had no idea.) It was invented to take their cream of mushroom soup and pair it with canned green beans and crispy fried onions. Really, a strange combination. But it works ! Since then, Americans have been making them mainly for Thanksgiving and other holidays.

What makes this Instant Pot Green Bean Casserole better than the rest? Well, this is the point The taste. Here’s what we did for this Instant Pot Green Bean Casserole to give it a modern twist:

  • Fresh green beans. No canned beans here! They come out tender and crunchy with just the right amount of texture.
  • Real mushrooms and cream. You don’t need canned soup either! This one uses real mushrooms and cream for great flavor. (We also added a little parmesan because: why not?)
  • Gourmet chips! Yes, instead of the signature crunchy onions, Alex came up with the idea of ​​using crunchy sour cream and onion chips. It really works, and you’ll have leftovers to munch on (instead of random onions gathering dust in your cupboard).

How to Make Instant Pot Green Bean Casserole: A Tutorial

How does all this work in a pressure cooker? It’s pretty easy to make an Instant Pot Green Bean Casserole. Here are the basic steps on how to do it (see full recipe below):

Step 1 Prepare the vegetables.

Cut the beans (here’s a shortcut!). Chop mushrooms and shallot.

Step 4: Cut the beans into small pieces

Step 2 Jump mushrooms and shallots.

Use the Instant Pot frying feature to sauté the mushrooms and shallot in olive oil for about 6 minutes. Then add the green beans and the water.

Step 3 Pressure cook on high for 1 minute.

Cook under pressure for 1 minute. Note that it takes about 5 minutes for the Instant Pot to build up pressure. Then do a quick release.

Step 4: Fry the sauce.

Stir in the cream, parmesan, garlic and spices. Use the Saute function again for about 1 minute until a thick sauce forms. Transfer to a serving platter, sprinkle with shredded chips and serve!

What Kind of Instant Pot Should I Use?

All brands of pressure cookers are different! This is the brand we use: a Instant Pot 6 Quart Programmable Pressure Cooker. This recipe is adapted for a 6 liter pressure cooker. We also can’t talk about other brands and types of pressure cookers. For example, Instant Pot Mini works differently, so use it at your own risk!

Here’s an Instant Pot green bean casserole from scratch: fresh green beans, real mushrooms, and crumbled potato chips!


  • 8 ounces Mini Bella Mushrooms*
  • 1 large shallot
  • 2 pounds of green beans
  • 1 tbsp olive oil
  • 2 teaspoons cornstarch
  • ½ cup whipped cream
  • ½ cup grated parmesan cheese
  • 1 Garlic clove, grated
  • 1 teaspoon ground dried thyme
  • ½ teaspoon dried sage
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt, plus more to taste
  • Freshly ground black pepper
  • ½ cup Gourmet Potato Chips, Sour Cream and Onion Flavor**

  1. Finely chop mushrooms. Chop the shallot. Cut the green beans.
  2. Activate jump mode and add the olive oil to the Instant Pot. When hot, add the mushrooms and shallot and sauté until tender, 6 minutes. Then add the green beans and ½ cup water. Lock the Instant Pot lid. Place the pressure relief (vent) handle in the “seal” position.
  3. Cook at high pressure for 1 minute: Press the pressure cook button, make sure the ‘high pressure’ setting is selected and set the time. Note that it takes about 5 minutes for the pan to “preheat” and build pressure before you start cooking. (Avoid touching the metal part of the lid during cooking.)
  4. Fast Release: Release any remaining steam from the Instant Pot by setting the pressure release handle to “vent” and covering your hand with a heated towel or pad. Never put your hands or face near the opening when dispensing steam. Open the lid of the pressure cooker.
  5. Stir in cornstarch until coated. Add heavy cream, parmesan, grated garlic, thyme, sage, garlic powder, and kosher salt. Return to Saute mode and cook until thickened and bubbly, 1 minute. Taste and add more salt if you like.
  6. Place the bean mixture in a serving platter, 9×9 baking dish, or medium casserole dish. Serve garnished with mashed potatoes.

Remarks

*This amount is enough for a 9×9 casserole dish or the equivalent of a saucepan. If you’re feeding a larger crowd for Thanksgiving or a large crowd, you can double them up and fit in a 9×13 casserole dish.

**Of course, if you must, do not hesitate to substitute the traditional fried onions! We won’t judge.
