Since we just had a little one, you’re probably expecting kid-friendly recipes on A Couple Cooks, right? Although our baby is only 3 months old, we start early: and this one is kid and adult friendly! It’s a delicious veggie-filled snack that’s completely plant-based (vegan), sugar-free, and easy to make. And honestly, we couldn’t stop eating these veggie wraps ourselves. This Hummus and Vegetable Wraps recipe pays homage to National Eat More Fruits and Vegetables Day, a public holiday to encourage greater consumption of disease control and prevention products. It’s also named in honor of a fun initiative Refuel with Doleto make it easier for families to plan healthier road trips and summer vacations. The initiative launches today and features character recipes, holiday nutrition tips, a family photo contest with prizes and other fun activities inspired by Disney Pixar’s Cars 3, which hits theaters on the 16th. June. You can join Stock up on the Dole competition today through July 19.

Our niece Julia and our nephew Miles are gigantic Car enthusiast Julia, 7, loves to create her own recipes. So we thought we’d search them for ideas for a healthy fruit and veg road trip snack. Some of their brainstorms? Cinnamon-topped apples and grapes, strawberry cheesecake sandwiches, and peanut butter tortilla rolls. Using the rollup idea, Alex and I created a delicious rollup using hummus as a base and chopped veggies inside. Since the proportion of vegetables is quite small, we also recommend cutting carrot sticks and cauliflower florets into small pieces. However, it’s a new way for kids to get clean, healthy veggies. Oh, and you can serve it with fruit slices dusted with cinnamon, too!

As we become parents, I expect we’ll continue to find interesting and simple twists on how to serve produce. These vegetarian and vegan vegetable rolls are a kid-friendly snack that’s delicious and healthy. They also serve as adult party appetizers!


  • 4 Dole® Large Carrots
  • 1 Dole® Big Head Broccoli
  • 1 Dole® Small Head Cauliflower
  • 3 Green Onions
  • 8th 8-inch whole-wheat or multi-wheat tortillas
  • 8 ounces (1 cup) high-quality hummus*, bought or homemade

  1. Peel and grate the carrots with a julienne peeler or box grater. Cut the tops of the broccoli and cauliflower into very small pieces (as shown in the photo). Cut the spring onions into thin slices.
  2. Spread about 2 tablespoons of hummus on a tortilla in a thin layer. Scatter another thin layer of veggies on top, being careful not to overfill and leaving the top of the tortilla without veggies (as shown in the photo). Starting at the bottom of the circle, roll up the tortilla tightly; As you roll up, the veggies will naturally rise and spread evenly across the roll. Using a serrated knife, cut the roll into 6 or 8 pieces. If desired, pierce with toothpicks. Refrigerate until ready to serve. The wraps will keep in the fridge for up to 2 days, but taste better because the tortillas will soften over time.
